(Critical) Assorted potentially hazardous ready to eat foods found past the maximum expiration date including chick peas, cottage cheese, milk, cut melon, etc. Once datemarked with a maximum expiration date not to exceed 7 days from when the food is prepared or package/container is opened. You must discard the foods by the maximum expiration date. Food found prepared 10/28/09 still in the facility. Corrected by discarding foods. Provide action plan for discarding foods by expiration date. Form provided.
Ventilation system is not working properly. Tere was grilled chicken on the char broiler at time of inspection and kitchen was filled with smoke. Observed going out of the hood canopy instead of out through ventilation system. Repair/clean.
Paper towels missing from the handsink in the employee restroom. Provide paper towels for proper hand drying.
The shield over the cooking equipment for the bulbs is hanging down exposing the bulb. The bulb in the liquor storage room is not plastic coated or shielded. Reset shield over the cooking area to protect the bulb and replace bulb in the liquor room with a plastic coated or shielded bulb.
Utensils drawers under the prep table need cleaning. Had excess spillage and debris build up. Clean now and place on a mroe frequent cleaning schedule.
The ventilation hoods and the sides of lower tray for char broiler need cleaning. Clean now and place on a more frequent cleaning schedule.
(Critical) Establishment made whipped cream butter is datemarked 5/2 & was in refrigerator on cook line at time of this inspection. Check foods daily & discard at appropiate time. Item corrected at time of inspection by pic disposing of product. ,
Insect fly strip is positioned above the 3-compartment sink & next to pots & pans on shelf. Reposition strip to an area away from equipment. ,
The drain line(s) from the ice bin at the bar, the ice machine in the kitechen and the ice machine in basement need to be repositioned so all of the drain lines from each piece of equipment are maintained with the required 1" air gap. It appears that the lines have come loose and now have an air break instead of an air gap. This can be accomplished by either re-strapping the lines and/or cutting them off to provide the 1" air gap above the floor drain they drain into. ,
The area of the outer o-ring on mix dispenser at bar has build-up on it. The non-food contact portion of the dispenser must be cleaned on a regular basis to prevent build-up of mix residue etc. Nozzle was disassembled at time of inspection for cleaning. ,
