Staff must be taking food temperatures with thermometer before placing foods in steam table to ensure proper temps have been reached. (Critical) Observed plate of cooked chicken breasts and pan of crushed sausage in upright cooler near cooking line door with an internal food temp of 52-55f. Chicken and sausage were tightly covered with saran wrap and were made last night per pic. All phf must be rapidly cooled from 135f to 70f within 2 hours and from 70f to 41f or below within a total of 6 hours. Pic stated correct cooling procedures, but staff did not follow approved procedures last night when removing chicken and sausage from hot holding. Pic corrected by discarding chicken and sausage. Pic also to educate and retrain staff on proper cooling procedures as needed. Critical corrected

Observed plate of cooked chicken breasts and pan of crushed sausage in upright cooler near cooking line door that were tightly sealed with clear saran wrap when placed in cooler to cool. Do not seal or cover phf when actively cooling as this traps heat in food product. To correct, please utilize shallow pans, ice baths/ice wands and do not cover when placing food into cooler to cool.
