(Critical) Incorrect quat test kit available for monitoring sanitizer concentration. Please provide proper quat test kit (qt-40). Not corrected. ,

(Critical) Quaternary ammonium concentration high at manual warewashing operation in kitchen. Sanitizer shall be provided at proper concentration per manufacturer's label use instructions. Corrected at time of inspection by diluting the sanitizer solution to achieve proper quat concentration. Facility is using oasis 146 with a sanitizer range of 150 ppm - 400 ppm. Sanitizer concentration was found >500 ppm

(Critical) Inadequate hot water at handwash sinks in men's employee/public restroom. Hot water shall be provided at a minimum 100°F at all handwash sinks. Hot water found at 68°F after running for several minutes. Not corrected. ,

Observed both wiping cloth buckets in prep area with a sanitizer concentration of less than 100ppm of quat. All wiping cloth buckets must be mixed as per chemical manufacturers directions (in this case 150-400ppm). To correct, please mix buckets as required and verify with proper test strips as needed. Pic corrected by remixing both sanitizer buckets to 200ppm at time of inspection. Violation corrected

(Critical) Observed facility not sanitizing dishware and utensils properly as i measured 0 ppm of chlorine in dishmachine. Dishmachine needs to be sanitizing as per manufacturers directions (in this case, 50-100ppm). Pic corrected by priming dishmachine at time of inspection. Rechecked, now sanitizing at 50ppm. Violation corrected.

(Critical) Staff are not checking sanitizer concentration of dishmachine before use. Staff need to be verifying all sanitizer concentrations with test strips more often and as needed. Pic corrected by educating staff on proper dishmachine operations, approved sanitizer levels and test strip usage at time of inspection. Violation corrected.

Observed 1 of the ice machine drain lines slipped into floor drain receptacle. All clear water discharge lines must be air gapped above flood rim of floor drain receptacle. To correct, please raise (or cut) drain line ( +/- 1-2 inches) to provide proper air gap as required

(Critical) Observed one of the culinary students on the prep line handling and prepping rte fruit (grapes, strawberries) after rinsing with water with bare hands. All other students in kitchen were wearing gloves (as needed) at time of inspection. Food employees may not contact rte food with their bare hands and shall utilize suitable utensils and plastic gloves as required. Pic corrected by educating student on bare hand contact, rte foods and foodborne illness transmission at time of inspection. Grapes and strawberries were also re-rinsed at time of inspection. Observed exterior surfaces of dishmachine (top and sides) with an accumulation of scale and debris. To correct, please clean now and on a more frequent schedule

(Critical) Observed blender cap (blade to cup interface) with an accumulation of sticky/oily debris. Blender was not disassembled after last use. All food contact surfaces of equipment must be washed, rinsed and sanitized after every use and must be clean to sight and touch. Pic corrected by disassembling all blender components and sending through dishmachine at time of inspection. Critical corrected.

Observed dishmachine drainboards not sealed to wall. To correct, please seal/reseal drainboards as soon as possible to prevent water and debris from falling and collecting under dishmachine
