Corrected at time of inspection by diluting the sanitizer solution to achieve proper quat concentration. Facility is using oasis 146 with a sanitizer range of 150 ppm - 400 ppm. Sanitizer concentration was found >500 ppm

Observed both wiping cloth buckets in prep area with a sanitizer concentration of less than 100ppm of quat. All wiping cloth buckets must be mixed as per chemical manufacturers directions (in this case 150-400ppm). To correct, please mix buckets as required and verify with proper test strips as needed. (Critical) Observed facility not sanitizing dishware and utensils properly as i measured 0 ppm of chlorine in dishmachine. Dishmachine needs to be sanitizing as per manufacturers directions (in this case, 50-100ppm). Pic corrected by priming dishmachine at time of inspection. Rechecked, now sanitizing at 50ppm. Violation corrected.

Observed 1 of the ice machine drain lines slipped into floor drain receptacle. All clear water discharge lines must be air gapped above flood rim of floor drain receptacle. To correct, please raise (or cut) drain line ( +/- 1-2 inches) to provide proper air gap as required

Observed missing light shield on overhead lights in dry storage room in dining room. To correct, please replace as soon as possible
(Critical) Observed one of the culinary students on the prep line handling and prepping rte fruit (grapes, strawberries) after rinsing with water with bare hands. All other students in kitchen were wearing gloves (as needed) at time of inspection. Food employees may not contact rte food with their bare hands and shall utilize suitable utensils and plastic gloves as required.
