(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found without proper date marking. These food items once opened, prepared or removed from freezer shall be clearly marked with the discard date. Critical corrected: at time of inspection discarded some of the food items and marked those if prep/open date known by pic. Observed 3 opened milks, 2 opened half & half creamers, 1 opened whipped cream in upright reach-in-cooler in dining area and several "leftover" food items in refrigeration unit in ice machine room

Personal items stored improperly in kitchen. Please provide a coat rack in a separate area away from food prep, food equipment and food storage areas

Observed food item cooling improperly in one door reach-in-cooler on cook line. Please use one or more of the following listedto assure cooked and cooled potentially hazardous food cools within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F. Corrected at time of inspection by taking cover off of fajita meat. Approximately 3 inches of food in metal pan. Please monitor to assure proper cooling occurs

Drain under sink on cook line plugged. Please repair and maintain. All other drians taking water without a problem

Please resurface floor in area of new mop sink before installing permanently. Paint peeling on floor in this area

Shower stall basin provided for mop sink. Please enclose open sides and grout to floor to provide good seal around entire sink

Please provide tongs for chips on table in self-service area with handle facing customer

Metal stem thermometer not calibrated properly. Please calibrate and check routinely for accuracy

These areas in need of cleaning: underside of mixer, underside of shelf over range and oven catch tray. Please clean now and as often as necessary to maintain in clean condition

Ceiling leaking in one area in dining area. Please repair when weather allows. Leaks are not near the food service area

Provide rack to hang mops and brooms near new mop sink

Bread basket not protected from potential airborne contamination. Please relocate under sneeze sheild if there is room or provide an additional sneeze shield. Corrected at time of inspection by relocating under sneeze shield

Health Report - 08/03/2011 (2 critical incident(s))

(Critical) Sliced deli meat and sliced cheese found in dining area on platter at improper temperature. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection discarded sliced deli meat and sliced cheese found at 58°F - 60°F. Deli meat and cheese platter sometimes offered to employees in morning before lunch. In future pic will use refrigerated salad bar to store meat and cheese at 41°F or below. Will need to turn on salad bar early enough for food to maintain at proper temperature.

(Critical) Raw eggs found stored above ready-to-eat food items in walk-in-cooler. Critical corrected: at time of inspection relocated raw eggs to bottom shelf in wic below and away from any ready-to-eat food items

Provide curbed janitors sink for disposal of mop water. Currently mop water is disposed into a floor drain in the corner; floor paint is peeling in this area

Floor paint peeling in area of mop water disposal. Remove peeling paint and resurface to provide smooth, easily cleanable surface

(Critical) Swollen can found in dry storage in ice machine room. Please monitor cans for rust, swelling and dents. Provided pic with copy of dented can poster. Critical corrected: at time of inspection discarded swollen can. Pic will set up dented can storage area

(1) floor drain not taking water under small sink on line. Please repair and maintain in good repair. (2) please relocate ice machine drain line directly over receiving drain to prevent water build-up onto floor. Discussed providing some type of sturdy stand to hold ice machine; currently 4 pvc pipes resting on ground

These areas in need of cleaning: interior clean utensil storage bins under slicer, underside of 6 burner stove shelf, 6 burner stove catch tray, exterior panini grill, interior one door reach-in-cooler on line and interior domestic refrigeration unit in ice machine room. Please clean now and place on routine cleaning schedule. Consider providing lids for clean utensil storage containers stored under slicer, removing shelf above stove and consider removing the panini grill that is not in use
