(Critical) Observed pop nozzles on pop machine in dining area filthy. Nozzles are soiled with a heavy accumulation of mold and debris. All pop nozzles must be washed, rinsed and sanitized every 24 hours or as needed. Pop nozzles must be clean to sight and touch at all times. As stated in past, slicer must be washed and sanitized after every use. Do not wait until end of day to clean slicer. I will check this item at follow up inspection. (Critical) Observed 3 compt sink automatic sanitizing dispenser not able to sanitize dishware properly. Machine tested at 0ppm of chlorine at time of inspection. To correct, please repair sanitizing dispenser so dispenser distributes 50-100ppm of chlorine at all times. Will need to manually add bleach to sanitizer compt to properly sanitize all dishware and utensils until dispenser is repaired. Pic called for repair at time of inspection. I will check this item at follow up inspection. Please correct within 10 days. Follow up site visit 11/30/09: automatic sanitizer dispenser above 3 compt sink has been disconnected and is no longer in use. Employees will be mixing 3 compt sink manually. Test strips have been obtained and employees have been trained in proper 3 compt sink setup. Bleach concentration was 50ppm at time of follow up. If dispenser is repaired, will need to monitor bleach concentration daily to ensure machine is functioning properly. Critical corrected

(Critical) Observed pan of fried chicken cooling on prep counter with an internal food temp of 86f. Cook stated that food has been cooling for unknown length of time. All phf must be cooled from 135f to 70f within 2 hours and from 70f to 41f or below within 6 hours. Do not cool foods at room temp. Observed plastic bowls stored in bulk containers of salt in dry storage area. As stated in past, please obtain and utilize proper scooping utensils for all foods. Storing plastic bowls in food products do not protect foods from hand contamination

Observed pan of fried chicken cooling on prep counter at room temp. Please cease this practice immediately. All foods must be cooled under refrigeration. Need to utilize shallow pans and ice baths to cool phf. Do not cool foods at room temp

Employees not using test strips to check chlorine concentration in 3 compt sink. To correct, please obtain and train all employees on proper 3 compt sink setup and test strip usage

Observed plastic single service forks and knives in storage bin in self serve area in dining room all mixed up together in bin. Please organize bin so food contact portions of utensils are not exposed to contamination. To correct, please rearrange all plastic utensils so handles are all facing the same direction in bin.

(Critical) Observed slicer in prep area soiled with debris (slicer was used yesterday, but not disassembled and cleaned after use). All food contact surfaces of equipment must be washed, rinsed and sanitized immediately after use and must be clean to sight and touch. All phf rte foods (including deli meats) must be labeled with a 7 day consume by datemark label (day 1 is slice date). Pic corrected by properly datemarking freshly sliced deli meats. Food workers cannot handle rte foods with bare hands and shall use suitable utensils and plastic gloves at all times to help prevent contamination.
