Observed an employee dry a cup from the dishwashing machine with a cloth towel. To correct discontinue drying cups/dishes with a cloth towel and allow cups/dishes to air dry prior to storage or use.
Found the floor under equipment, edges and corners in the prep area soiled with accumulation of debris. To correct thoroughly clean floors and keep clean.
Found containers of single use utensils (spoons and forks) stored with handles down and lip-contact surfaces exposed. To correct store utensils with handles up.
Found the area surrounding the pump inside the ice machine soiled with light accumulation. To correct follow manufacturers directions and thoroughly clean pump areas.

Found the sides of the ice machine soiled with splash. Found mineral build up on the tip of the hot water spout of the hot water pot. To correct clean as soon as possible, and clean on a more frequent schedule.
Found an opened case of wrapped cups stored on the floor of the mop closet/storage area. Found several cases of cups stored on the floor under the front counter and window area. Found the bottom shelf in the mop closet/storage area not at least 6 inches off the floor. To correct food utensils should be stored on shelf at least 6 inches off the floor.
Floor in the front counter prep area uneven with different surfaces. To correct repair floor to be durable, smooth and easy to clean. Found holes in walls where coffee roaster ducts go through filled with fiberglass insulation. To correct fill areas surrounding ducts with a more durable filler. Found the glass panel of the back/side door cracked. To correct repair/replace glass.
Found the upper spray nozzles of the dishwashing machine clogged with debris. To correct clean upper nozzles and clean as needed.

Found the edges of the coffee roaster soiled with coffee bean debris. To correct follow manufacturers directions and thoroughly clean coffee roaster.
Found the wiping cloth used to wipe the steaming wand of the espresso machine not submerged under sanitizer. To correct store wiping cloth in sanitizing bucket completely submerged under sanitizier.
Found the edges of the floor in the prep area front counter with missing tile and uneven. To correct repair/replace missing tile and repair floor to be durable, smooth and easy to clean. Found piping from the "new" roaster extending out of the exterior wall with large gaps and cracks. To correct seal the gaps and cracks between wall and pipes to prevent pest entrance.
Found cups stored on top of cloths lining a tray, and silverware stored on top of deli tissue lining utensil bin. To correct discontinue using absorbent type liners, and replace with a nonabsorbing type liner.
Found a wiping cloth stored on top of counter top. To correct store wiping cloth completely submerged under sanitizer in a sanitizing bucket.
Found the floor in entire facility with missing tile, peeling floor coating, and not smooth. To correct repair floor to be smooth and easily cleanable.

(Critical) Observed the single use gloves being used for food service to be from "harbor freight" and labeled as industrial use. The package indicates the gloves are for cleaning and automotive uses. Any current supply of gloves may be used for cleaning the bathroom & building, but they may not be used for food preparation. Purchase and utilize food service gloves that are available from your food service supplier
(Critical) Observed dairy products and soy milk stored in the two door cooler at the espresso machine station that is not maintaining proper temperature. These items were observed at 44 to 53f. Corrected by relocating these phfs to the other two door low-boy cooler. This cooler may not be used for phfs until it is repaired and maintaining 41f or below
(Critical) Observed small flies (fruit flies and/or similar) present in the kitchen space. Eliminate the breeding areas (rotting wood, unclean drains/floor surfaces, etc. ) for these flies (moist areas with debris build-up) to prevent future generations
(Critical) Observed a scented bleach being used by staff to prepare a wiping cloth solution. Corrected by discussing this issue with staff, and by staff emptying the scented bleach solution, rinsing the container and providing a new sanitizer solution with regular chlorox bleach at 50-100 ppm
Observed the wiping cloth used to clean the steaming wand on the espresso machine to be stored around the steaming wand resting on the spill tray. Between uses the wiping towel must be stored in a solution of sanitizer
Observed the following areas to be in need of cleaning now and more frequently: the floor under and behind the one door and the two, two door low-boy coolers, the floor at the espresso station (including the bottom portions of the cabinet under the espresso machine, the floor sink under the dish washing station, and the mop sink

The two door low-boy cooler at the espresso machine was operating at 54f. A part is on order currently. Repair as needed to maintain foods at 41f or below
Observed a 55 gallon barrel outside used to store coffee grounds with out a cover. Please provide a water-proof cover for this container

This facility still lacks a certified food safety manager (full time employee). The manager, mel, indicated she is signed up for a serv-safe course starting next week thrusday. Provide me with a copy of your certification once you receive it in the mail
Observed the platform for the dish washing machine to be sagging and rotting, and possibly some additional wood in the vicinity of the dish washing machine. Eliminate any damaged wood and replace it with an easily cleanable material that is impervious to water, or provide replacement wood that has been sealed on all surfaces
