Found several wiping towels in a sanitizing bucket on the cooking line not submerged under sanitizer. To correct store wiping towels completely submerged under sanitizer.
Found the edges on the right side cooking hood soiled with greasy build up. Found the interior hinge of the right prep top cooler soiled with heavy build up. Found the areas under and around cooking equipment on the cooking line soiled with grease and accumulation. To correct clean all noted areas and clean on a more frequent schedule.
Found the floor under and around the grease dumpster soiled with grease and accumulation. To correct clean floor and keep clean.
Found the door handle trim on cooler doors on the cooking line missing. To correct replace missing door handle trim.
Found an employee's uncovered cup of beverage on shelf on the cooking line. To correct either have employees drink in designated areas only, or have employees drink from cups that minimize contamination such as cups with lids and straws.
Found the right dumpster lid cracked and stuck to dumpster upright, making it hard to close dumpster when stuck. To correct repair dumpster lid.
Found light on the back kitchen hood not working. Found lights in the storage room not fully functional. To correct repair/replace lights in cooking hood and storage room.
(Critical) Found time/temperature control for safety (tcs) food, pancake mix in dispenser 52°F, liquid eggs 49°F, liquid eggs 50°F in the top portion of the central door/drawer cooler. Pic temporarily corrected by discarding items above 41°F, and has been instructed not to use this portion of cooler to hold tcs food, until repaired/replaced to hold tcs food at 41°F. ,
Found clean but wet food containers stacked on the clean utensil shelf. To correct allow clean containers to air dry prior to stacking and storing.
Found the floor under the steam table and waitstation areas soiled with build up and accumulation of debris. To correct thoroughly clean floor and clean on a more frequent schedule. Found the air ven cover in the mens restroom soiled with dusty build up. To correct clean air vent cover and keep clean.
Found the hood filters on the left side of the cooking hood soiled with greasy build up. To correct clean hood filters and clean on a more frequent schedule.
Found the top portion of the door/drawer cooler not holding tcs food at 41°F. To correct repair/replace cooler to hold tcs food at 41°F. Found a hood filter missing a fin panel. Found the paper towel dispenser in the back kitchen area missing. Found the drawer handle trim missing from door/drawer cooler on the cooking line. To correct repair/replace hood filter, paper towel dispenser, and cooler door handle trim.
Found several tightly covered pitchers of cream cooling in the walk in cooler shelf. Pic corrected by turning lids to pour position allowing heat to escape from cooling pitchers.
(Critical) Found time/temperature control for safety (tcs) food, hash browns 70°F in the left 2 door sectional reach in cooler/freezer. Found tcs food, hash browns 68°F and raw shell eggs 65°F in the right 2 door sectional reach in cooler/freezer. Pic corrected by discarding hash browns and raw shell eggs, as other items in coolers were at 41°F, it appears items out of temperature were probably left out. This cold hold violation has repeated 3 direct times and an administrative conference notice and risk control plan have been issued. ,

Found the pop nozzles soiled with accumulation of debris on the pop machine in the left wait station. To correct follow manufacturer's directions and clean pop nozzles.
Found the oven on the left side of the cooking area in the back kitchen not completely under the cooking exhaust hood. To correct either adjust/move equipment to be completely under the cooking hood or provide a larger cooking exhaust hood.
Found mop left on the bottom of the mop sink. To correct hang mop after cleaning task has been completed.
Found the ceiling in the back kitchen cooking and prep area blistering and peeling. To correct repair and finish ceiling to be smooth and cleanable.
Found tongs not provided for each container of food in the top portion of the left prep top cooler by the wait station. To correct provide tongs/utensils for each container of food to help prevent contamnation of food items.
(Critical) Found time/temperature control for safety (tcs) food, cream cups 48°F to 49°F in a covered container in the top portion of the right 2 door prep top cooler. Pic states cream may have been placed back into cooler after being left out, as other items in cooler were at 41°F. Pic corrected by discarding cream cups and has been reminded not to leave cream cups out on counter top or place unused cream cups back into cream storage container. Found tcs food, a container of hash browns 53°F to 58°F in the left 2 door sectional reach in cooler/freezer, and found a container of home fries 53°F in the right 2 door sectional reach in cooler/freezer. Pic states these items may have been left out on counter top and placed back into cooler, as other items were at 41°F in these cooler. Pic corrected by discarding hash browns and home fries and has been reminded to keep items at 41°F in coolers. This is a repeated cold violation and a risk control plan has been issued. ,
Found the pop nozzles and diffussers in the right waitstation pop machine soiled with slight accumulation. To correct follow manufacturers directions and clean pop nozzles and diffussers.
Found the upper spray nozzles of the dishwashing machine clogged with plastic strips. Pic corrected by removing plastic strips and has been instructed to monitor and ensure dishwashing machine spray nozzles are cleaned as needed.
Found the insulated cold hold beverage dispenser used to hold cream run through the dishwashing machine without disassembling nozzle and with cream running back in to dispenser from the nozzle. To correct follow manufacturer's directions and disassemble beverage dispenser nozzle and then properly clean all food contact surfaces.
