Observed knives at food preparation area stored in a wood knife block. Knives were observed to be clean. However, this type of storage rack is not easily cleanable and will accumulate food debris over time. Correct by replacing house made rack with an nsf approved knife holder

(Critical) Found the two door beverage air reach-in refrigerator located at the preparation area of the kitchen with foods at 48 to 50 degrees f. Person in charge corrected this item by discarding time/ temperature control for safety food items. Pic turned the thermostat on the beverage air reach-in to lower the cold holding food temperatures in the beverage air reach-in unit. After thermostat was adjusted by the pic the internal air temperature of the beverage air reach-in was found to be at 38 degrees f. Meeting the cold holding temperature required of 41 degrees f. Or less for time/temperature control for safety food items

(Critical) Found the interior of a pan with dark color of food residue material located at clean utensil storage shelf. Found the blade of the can opener with food debris on the blade. Pic corrected these items by washing, rinsing, and sanitizing them at the automatic dishwashing machine

Found an uncovered container of food located on shelf in the walk-in freezer. To correct should cover foods stored in the walk-in freezer to protect them from potential contamination

Found the underside of the shelf located above the prep table with accumulation of debris. Found the guard of the mixer with dark debris on it in need of cleaning. To correct schedule more frequent cleaning of this kitchen equipment to keep them clean as required

Found wet pans stacked at utensil shelving of the kitchen. To correct should air dry pans prior to stacking on the clean pan shelf
