(Critical) The condensate waste lines for the ice cream machines drain to a bucket and are submerged in the water in the bucket. Replumb the lines so that they are plumbed to the sewer system via an airgap. You will most likely have to install a pump as it appears that you may not be able to get gravity feed to the sewer system. Then provide an airgap from the drainline of the pump above the receiving sewer receptacle.
Food employee does not have hair properly restrained in prep/serve area. Hair must be properly restrained. Use a ball cap, hair net or other effective means of restraining hair

(Critical) The shake machine has ice cream debris build up on the top section of the rod that mixes the shakes. Clean now and retrain employees on proper cleaning technique for the shake machine.
(Critical) Soft serve ice cream in the reach in section of the soft serve machine found at 46 - 48 degrees f. The ambient air temperature is 48 degrees f. Potentially hazardous foods must be maintained at 41 degrees f or below. This unit is ordered out of service for the storage of potentially hazardous foods until repaired and or adjusted and capable of holding ph foods at 41 degrees f or below.
One of the fans in the walk in cooler is not operating properly. The food product temperature was in compliance during the routine inspection, however if one fan is malfunctioning it is possible that the unit may not stay cold enough as weather warms up. Repair the fan so that it is operating properly
The plastic guard on the shake machine was broken and repaired with caulk making this a non smooth non cleanable surface. Replace the plastic shield if possible so that it is smooth and cleanable.
The interior reach in cooler section for holding the self serve ice cream mix had an ambient air temperature of 48 degrees f. This unit recently came out of the stand by mode so it is possible that the thermostat is not set properly while in this mode. It is also possible that the unit needs repair and not just adjustment. Call for service on this unit.
The underside of the shake machine has food debris build up. Clean now and place on a more frequent cleaning schedule.

Floors in the walk in cooler have excess water build up due to thawing of product in the cooler and condensation getting onto floor through shelving. Clean up excess water and place on a more frequent cleaning schedule.
Leak at the sink in the main prep area. Repair leak. Valve at 3c sink for hot water turned off due to recent repair. Repair plumbing and keep valves turned on for proper water volume to all sinks.
The restroom door was ajar at time of inspection. Keep restroom doors closed to minimize attraction for insects/rodents. Adjust self closer as needed to make sure door closes by itself.
(Critical) Datemarking is not in compliance. All potentially hazardous ready to eat foods that are held over 24 hours require datemarking. This would include opened deli meats, cream cheese, opened milk, opened whipped cream, sliced tomatoes. If these products are held cold over 24 hours once opened, sliced, etc. They must be datemarked with a maximum expiration date to consume or discard of 7 days including the day it was opened. Reinstitute your datemarking policy immediately.
(Critical) The soft serve was found to be between 45 - 46 degrees f in the bins. Potentially hazardous foods must be maintained at 41 degrees f or below. Corrected by discarding ice cream at time of inspection and you must repair or adjust the unit to hold the ph foods at 41 degrees f or below.
As it was described it is probable that carry over soups and chilis are not being properly cooled. You must employ one of the above methods for rapid cooling to achieve chilling the food from 135 to 70 degrees f in 2 hours and 70 degrees f to 41 degrees f in an additional 4 hours. Use ice sticks, the freezer or shallow pans and an ice bath to rapidly cool any carry over soup/and or chili.
The thermometer for the walk in cooler on the outer wall is inaccurate. Replace or provide another thermometer for the interior in order to be able to determine the temperatures of potentially hazardous foods
The interior of the chest freezer needs to be defrosted. Defrost now and place on a more frequent defrost cycle.
The handle on the door of the prep unit is loose and missing a screw. Replace screw and secure door handle.
