(Critical) Found no food thermometer suitable for thin masses available in the kitchen at the time of this inspection. To correct - a needle-probe food thermometer that is suitable for thin masses must be available at all times in the kitchen. Please provide this required thermometer. A source for this thermometer is restaurant equippers. Com. The unit is approx. $15 - 20. A follow-up inspection will be performed in 10 days to verify correction

(Critical) Found the hand sink on the west wall without any hand drying provisions or a holder/dispenser for them. To correct - install a paper towel holder/dispenser at this sink and make sure towels are always available in this location. A follow-up inspection will be made in 10 days to verify correction

(Critical) Found both hand sinks in the kitchen and restroom sinks not able to provide hot water that reaches the required 100* f within 3-4 minutes of constant running. It is understood that the hot water tank is on a timer for cost savings during the week. However, it must be verified that these hand washing sinks can reach 100* f. To correct - a follow-up inspection will be performed in 10 days, at a time mutually agreed upon with staff so that the hot water tank is allowed to run and the temperature at the hand sinks can be verified.

(Critical) Found two of the three food thermometers in the cabinet between the ovens not properly calibrated. Corrected - inspector calibrated the two thermometers at the time of this inspection. Make sure thermometers are calibrated on a more frequent schedule

(Critical) Found a slushie machine in the dry storage room that was put away without proper cleaning of the dispensing spigot. The spigot on two of the three dispensers had slushie residue and/or syrup in the spigot mechanism. To correct - this unit must be thoroughly cleaned after each use including disassembling and wash, rinse and sanitizing the spigot components. A follow-up inspection will be performed in 10 days to verify correction

Found that there is a leak in the hood above the stove. Water is leaking in around the middle fire suppression nozzle where it meets the ceiling. No food was being prepared on the stove at the time of this inspection. To correct - repair the ceiling/hood and the reason it is leaking over the stove

Found single service items: napkins, paper plates, straws under slushie machine, and coffee stirrers on the shelves in the dry storage room unprotected from dust and potential splash. To correct - all single service items must be contained in original wrapping, zip-type disposable plastic bags, or sturdy, smooth, cleanable storage containers. It is understood that many people use these items, but care must be taken to see that each group is making sure items are protected when putting extras away

(Critical) Found two spary bottles without a label as to their contents. To correct - label spray bottles so that all staff and helpers know what is in each bottle. As label wears off, re-label as necessary

Found single service items without wrapping or other form of protective packaging. Although this issue is much better than the last inspection, care must be taken to inform all staff and helpers of the requirement to keep these items protected. The plastic bin that is labeled "open cups and plates - use first" is a great idea, but it too must be kept organized to ensure that items are not "sifted through" by bare hand to get the wanted item
