The cooking equipment and floors in the grill/fry area are dirty. Staff need to be keeping this area cleaner. Also, the convection ovens are dirty and need to be cleaned more often.

(Critical) I observed sliced beef in a gravy at 108*f in the hot hold box by the grill. Foods in hot holding must be 135*f or hotter. It was discovered that cold deli meat was added to the hot gravy, bringing the temp down into the danger zone. Foods must be heated back up in oven to 135*f or greater and staff need to verify with thermometer. Corrected by doing such. Also - cut melon on the buffet bar found at 51*f. Must be holding 41*f or less. This buffet is not set up properly. Pans of food need to be immersed on the rails so the pans are immersed into the wells. I will be back in 30 days to verify proper set up and holding temps. Until then, discard all phf's that are above 41*f after serving times. Melons were discarded.

(Critical) The self serve cookie station, both pizza stations, the hot hold station at the grill and the cold well where sushi prep was ocurring all lack adequate protection of the foods served or prepped there. You need to provide adequate barriers, sneeze gaurds at all of the above locations. I will be back in 2 weeks to verify this has been done.

(Critical) The following foods were well past their expiration dates: cut cantaloupe(9/5), spinach(9/6), cut iceberg head lettuce(9/8), spring mix(9/5) and shredded cabbage(9/12). Staff need to be auditing dates and discarding foods when they expire. Corrected by discarding.

Wood cutting board found with cracks in the grain. Wood cutting boards need to be discarded once they begin to crack.

The top of the dishmachine needs to be cleaned more routinely.

Coffee filters not protected out at self serve coffee station. Keep filters in a covered container.

One of the wood cutting boards was beginning to crack. Discard them when they first begin to crack. Corrected.

(Critical) A tray of raw shell eggs was sitting on top of ready to eat foods in the upright cooler with "asian menu" items in it. Keep on bottom shelf. Corrected by doing such.

Repair the auto handsinks. One sticks on and the other doesn't come on at times.

I observed a hat and aprons stored on a utensil rack for clean kitchenware in the dishwash room. Store these items in safe area.

(Critical) I observed foods not being cooled safely. Found a pan of sausage gravy still at 66*f after over 3 hrs of cooling. Also, 3 pans of chicken rice soup were in too large of pot pans. Need to cool hot product in the walk in cooler in shallow pans and uncovered. Once cooled, cover. Use chart i left to verify cooling times. Corrected by discarding sausage gravy and putting soup in 4" hotel pans. Also, you need to be sure that all foods are fully cooled to below 41*f before they come out to the lines.

Please obtain thermolabel heat tapes rated for 160*f and use to monitor dish tank.

The sneeze gaurds need to be in place on the salad bar!!! i observed them in the up position, thus exposing the foods.

Repair the automatic handsink at the grill area. Appears that battery is dead on sensor.

(Critical) I found uncooked pizzas sitting out of coolers for too long at 66*f. You need to keep pizza in cooler below 41*f. Corrected by keeping speedrack in walk in cooler until cook time.

Please provide a wastebasket at all handsinks

I observed improper cooling methods for cooked off chicken breasts and rice. You need to put both these items on sheet trays and cool in the walk in freezer until product is below 41*f and then do further prep. While cooling product, do not cover foods. Corrected by following the above methods.

Please clean the interior of hot hold drawers/cabinets on the line more often. Also, the interior of the convection ovens and the conveyor oven need to be cleaned more often.

Store clean utensils with handles all on same direction.

Found tcs food, portioned and wrapped cream pies 58°F, in the right breakfast cold hold well. Pic temporarily corrected by discarding all tcs food in the breakfast left and right cold hold wells. Pic has been instructed not to use these coolers to hold tcs food, until repaired/replaced to hold tcs food at 41°F.

Note: found cream cheese cups 41°F in the back walk in cooler, pic states these are held in the display cooler during service, and placed in walk in cooler when no longer needed.

Found slight accumulation in the pop nozzles of the pop machine in the self service area. To correct follow manufacturers directions and throughly clean pop nozzles on a schedule to preclude accumulation.

Found a sponge floating in the sanitizing bucket, on the service line area. Pic corrected by discarding sponge.

Found a wiping cloth stored on the counter of the service area. Pic corrected by placing wiping cloth in sanitizing bucket.

Found the sides and edges of the cooking hood above the grill soiled with greasy accumulation. To correct clean as soon as possible, and clean on a more frequent schedule.

Found the breakfast left and right cold hold wells not holding tcs food at 41°F. To correct repair/replace coolers to hold tcs food at 41°F. Found water pooling on the floor , around the edge of the display cooler. To correct check to ensure that cooler is functioning properly, and condensation is draining properly.
