Found tcs food, pepperoni rolls 50°F in the 2 door worktop cooler on the end of the cooking line. (Critical) Observed the quat dispenser providing quat sanitizer at 150 ppm. The mixing instructions for sanitizing food contact surfaces in restaurants requires 200 ppm. Have your contractor adjust the mixture to provide 200 ppm. As a reminder the test papers will only provide an accurate reading when the solution is +/- 70-75°F
(Critical) The foods in the top and bottom of the pizza prep-top cooler were observed at 47f and 45f, respectively (after lunch). At the time of the inspection the temperature control dial was adjusted. Monitor this unit to ensure it maintains food at 41f or below
(Critical) Observed a generic black flexible hose providing water to the chemical dispenser to not be made of food grade materials (no back-flow preventer is installed upstream from this hose to prevent back-siphoning). Correct by providing a food grade hose assembly for this installation (nsf-61 or equivalent)
(Critical) Air gaps are not provided at the following locations for equipment drain lines: the ice bin at the pepsi drink dispensing station, and two of the drain lines for the ice machine/bin that was relocated to the back room. Air gaps (vertical height above the flood rim of the receiving plumbing must be 2x the discharge pipe diameter).
The following areas are in need of cleaning at this time and more frequently in the future: the floor behind the dish washing machine, and the floor sink that receives the waste water from the back dough prep room hand washing sink
Provide a silicone sealant at the junction of the newly installed hand washing sink and the wall (side and back-splash) to prevent debris and moisture build-up
Have your contractor provide your dish washing machine with an audible or a visual alarm on the detergent and sanitizer solutions to notify staff when the product is depleted
1) the sill made of tile for the back delivery door is damaged. Repair as needed to prevent pest entry. 2) provide a door sweep on the interior front entry door. During fair weather the exterior door is propped open. Therefore, your interior door needs to keep out pests
Observed several areas of the dish washing machine to be soiled (inside the cabinet and in the drain housing). Please clean these areas nightly
The pizza prep cooler (located on the line across from the char-grill) is not operating properly. A replacement part (thermostat) was purchased and will be installed tonight or tomorrow morning

No soap is provided for the dish washing machine. Their contractor was contacted late last week regarding the need for more soap and he was supposed to deliver it yesterday morning (monday). No soap has arrived as of tuesday afternoon. Provide soap for your dish washing machine asap
