(Critical) Observed 6 individually portioned containers of rte ranch dressing in upright coke cooler near front counter with internal food temps of 60-65f. Dressings were stored at room temperature throughout lunch and put in cooler when i arrived for inspection. As stated in past, ranch is made at toppers commissary, but there is no documentation on-site that states ranch can be left out of refrigeration. Ranch packages state "keep refrigerated" and original bulk box of dressing states "must keep refrigerated". Unless there is documentation from a certified food testing lab which states otherwise, all ranch dressing must be kept at 41f or below at all times. Pic corrected by discarding all out of temp ranch containers at time of inspection. Violation corrected. Please note: this priority violation has been cited at 2 consecutive routine inspections. As a result, a risk control plan must be completed and submitted to the washtenaw county health dept within 7 days. If violation is cited at next inspections, enforcement actions will be required. ,
Observed package of single service plastic cups stored next to handsink in front prep area (cups are in splash zone). Pic stated that ranch has been on counter for over 1. 5 hours. Ranch is made at the toppers commissary and individual packages say to "keep refrigerated" also, original dressing box says "must keep refrigerated". According to the information on-site, this ranch dressing appears to be a phf and must be kept at 41f or below at all times.
