(Critical) On the main cook line observed at the hot holding unit observed the following hot food items with an internal temperature of 110 to 120 degrees. 1. 1/9 pan cheese sauce 2. 1/9 pan gravy 3. 1/9 pan marinara 4. 1/9 pan sauce pic states he reheated these items to 170 degrees f prior to placing them into the hot holding unit about 2 hours ago. The hot holding unit thermostat is set improperly. Pic corrected by adjusting the thermostat on the hot holding unit and rapidly reheating the food items to 165 degrees f. Item corrected
In the basement study lounge back storage area observed four full cases of empty beer bottles. A few small flies were observed around the bottles. Empty bottles should be removed from this area more frequently, especially during slow business. Pic removed the bottles from the storage area. Item corrected
At the three door reach in cooler located between the wic door and wif door observed all three doors of the cooler to have open and cracked door seals. The pic indicates a contractor has been contacted to replace the seals.
(Critical) At the in use mechanical dishwashing machine observed the residual chlorine concentration of the final rinse at 0 ppm. The sanitizer reservoir is empty. Pic corrected by replacing the sanitizer reservoir. Item corrected.
(Critical) At the dishwashing area observed the handsink blocked by a large dirty linen basket. Pic corrected during the inspection by relocating the basket to an approved area. Handsink is now easily accessible. Item corrected

At the basement study lounge area observed two unprotected light bulbs above the ice machine. Correct by providing approved protection for the light bulbs.
Observed no handwash reminder signs at any of the handwashing sinks. Provide handwash reminder signs at each handwashing sink
Observed the following areas in need of repair: 1. In main kitchen under dishwasher observed a hole in the wall around the drain pipe. 2. In main kitchen next to the main cook line observed a hole around the gas pipe 3. At the bar observed broken floor tiles. Correct each item by repairing or replacing the affected item
At the main cook line ventilation hood observed gaps in the filter bank caused by missing filters. Pic corrected during inspection by locating and replacing the missing filters
