Pic stated that chicken was supposed to be de-boned and prepped last night, but was left in unit overnight and should have been discarded this morning. All phf must be held at 135f (140f per kfc standards) or properly cooled and held in wic at 41f or below. Pic corrected by discarding chicken at time of inspection. Violation corrected.

(Critical) Observed several individual to-go containers of rte mac & cheese, mashed potatoes and gravy in taco shell hot holding cabinet in prep area with internal food temperatures of 120-130f (unit was unplugged). All potentially hazardous rte foods must be held at a minimum of 135f or more at all times. Pic corrected by discarding all mac & cheese, mashed potatoes and gravy at time of inspection. Pic also plugged hot holding unit back in and unit was functioning properly. Violation corrected.

Observed 2 broken ventilation filters in vent hood above chicken fryers in back kitchen area. To correct, please replace broken filters as soon as possible

Observed floors in wic (under food shelves) and under fryer and rethermalizers in cooking area with an accumulation of grease and/or food debris. To correct, please clean these areas now and on a more frequent schedule

Observed henny penny hot holding cabinet in prep area in poor repair. Thermostat is broken and employees keep door propped open because unit gets too hot. Although food was holding at proper temperature at time of inspection, propping door open while unit is in operation is not a long term fix. To correct, please repair unit as soon as possible.

Observed the following areas in need of cleaning: *interior of all meximelt ovens on prep lines (heavy accumulation of dried on food debris). *interior of french fry/potato freezer in fryer/rethermalizer area (accumulation of food debris). *top and sides of rice/pasta bins in fryer/rethermalizer area (accumulation of grease and food debris). To correct, please clean all these areas now and on a more frequent schedule.

Observed water valve for overhead spray nozzle in 3 compt sink broken (employees using wrench to turn on/off). To correct, please repair as soon as possible. , observed pop machine drain line in cabinet under pop machine in dining room slipped down into drain (air gap not maintained). To correct, please replace tie wrap as soon as possible so air gap is maintained

(Critical) Observed pans of rte macaroni & cheese, corn, and baked beans in hot holding unit in prep area with an internal food temperature of 115-125f. Foods were reheated less than an 30 minutes ago per pic, but internal food temps were not taken. Pic stated that proper reheating of foods are normally done in the microwave oven and heated to a temperature of at least 165f. Pic not sure if this procedure was followed today or not. All phf must be reheated to 165f or more within 2 hours. Please remember that hot holding units are designed to hold food temperatures, not for reheating/cooking. Must utilize microwave oven or convection oven to reheat and verify food temperatures with a thermometer or temperature probe as required. Since food has been in unit for 30 minutes, pic corrected by reheating mac+cheese, beans and corn in microwave oven to 165f then returning to hot holding unit at time of inspection. Observed wic drain line (taco bell side) broken causing water to accumulate near door. To correct, please repair broken drain line as soon as possible

Observed wic and wif floor (taco bell side) with an accumulation of dirt and debris. Also observed wic (kfc side) floor with an accumulation of debris and food debris (raw chicken pieces on floor). To correct, please clean all these areas now and on a more frequent schedule

Observed one side of meximelt oven (interior surface) on prep line leaking water. To correct, please repair or replace meximelt oven as soon as possible. , observed henny penny hot holding cabinet in prep area (next to microwave ovens) not functioning correctly. Internal unit temp jumped from 180f to 240f within 20 minutes. Pic stated that they have attempted to adjust thermostat, but unit temperature vastly changes on own. Do not use this unit to store phf until properly repaired.

Observed scrap wood and other debris laying on ground next to trash dumpster on outside of building. To correct, please remove all unnecessary items from dumpster enclosure and clean area as soon as possible

All chemicals and toxics must be stored below and away from all food and single service items at all times to prevent possible contamination. Please educate all employees on proper chemical storage and location of chemical storage area.
