(Critical) The fried potatoes and hash browns were not time marked properly. One was marked well past the 4 hour limit(marked 4pm) and the other was not time marked at all. Potatoes were at 120*f. Managers need to be sure staff are properly time marking these items. Corrected by discarding.

(Critical) Repeat violation 2 times in a row. Submit the risk control plan within 10 days. Once again, i observed the water temp of wash water below the required minimum of 110*f. Water temp was at 93*f. Staff need to use thermometer to verify wash water temp is always at or above 110*f. Corrected by changing out water.
Provide a small wastebasket at each handwashing sink for paper towel disposal.
Post a thermometer at the dishwash sink so staff can take temps of wash water.
(Critical) I observed the washwater temp at 103*f. Must be maintained at or above 110*f when in use, as it was. Corrected by dumping and providing water at above 110*f. Use thermometer to verify for proper temps.
(Critical) Did not detect any sanitizer in the 3 comp sink. Upon further investigation, the sanitizer jug was found empty. Staff did not use test papers to verify for proper strength or you would have caught this. Managers must be doing line checks properly. Corrected by installing new jug of sanitizer.
(Critical) I checked 2 thermometers and they were off by 20*f too low. This store did not have it's normal thermo couple thermometer. Managers need to be sure to get a new thermometer right away if one breaks. The dial face thermometers were discarded. Corrected. Manager eventually found a dial faced thermometer that was accurate.
A thermometer was not available to use to check the dishwater temp. You need to keep working thermometers in your store.
