(Critical) Your store has the wrong sanitizer test papers(chlorine). You are using a quat based sanitizer and need qt-10 test papers for measuring sanitizer levels. You need to purchase some and send me a picture to my email within 2 weeks for correction of this violation.

You need to have a thermometer located at the dishwash sinks to measure for proper temps of wash and sanitize water.

(Critical) Staff are not using the quat test papers. This needs to be a part of the managers duties to check for proper sanitizer levels in buckets and at dishwash sink. Corrected by educating manager in charge.

You need to have a thermometer available at the dishwash area to monitor temps of wash and rinse waters.

Your cold well on the service line is not holding product at 41*f or less as required. I found pico and diced tomatoes at 51*f on the main service line. Have this unit repaired asap. Taco bell has these foods on time control, so i did not have them throw out product.

There is a leak coming out of the compressor in the walk in freezer that needs to be repaired asap!!!

The floors in the dining room feel greasy and are slippery. There is also a large puddle left on the floor under the bar seats. There is also excessive water on the floor in the walk in cooler. Staff need to be thoroughly cleaning the floors and mop drying all standing water up.

(Critical) You have an atmospheric vacuum breaker on your mopsink faucet with a wye connector with a shut off downstream of this vacuum breaker. You cannot have a shut off downstream of this type of vacuum breaker. Corrected by removing the wye connector.

The faucet knob was loose and not easy to turn on and off the water at the handsink by the drive thru window. Manager tightened up the screw and repaired it.

You need more area to air dry your ware, as you cannot stack ware together until air dry.

(Critical) The washwater temp was found at 99*f. Must be maintained at 110*f or greater. Use thermometer to verify washwater temps throughout the day. Corrected by dumping and re-filling with water above 110*f.

(Critical) The drain line out of the walk in cooler was not air gapped. A rubber extension was put on the drain pipe. The drain line must finish above the top of the drain pipe at all times. Corrected by removing rubber extension.

Post your foodservice license on the wall at the front counter where the public can view it.

(Critical) The cold holding rail was found holding foods at 44*-47*f. Must be holding 41*f or less. This unit must get repaired immediately!!! until it is repaired and you confirm foods hold at 41*f or less, you must discard all foods held on the cold rails every 4 hours, no exceptions! i will be back on friday to confirm this unit has been repaired!

The main prep line reach in cooler doors need to be adjusted. Doors do not close easily. Also, you need to have the leaks coming out of the compressor in the walk in freezer repaired. All water needs to be draining out through the drain line.
