(Critical) Sanitizer test strips not being used. You need to use them to measure for sanitizer strength of 200ppm. Sanitizer bag was empty and you would have caught that if using test strips! corrected by using them several times a day from now on.

(Critical) There was no sanitizer detected in the 3 comp sink or any of the wiping cloth buckets. Upon further investigation, the sanitizer bag was empty. Keep sanitizer at 200ppm at all times. Corrected by installing new bag and came out at 200ppm.

Scissors used for opening bagged foods was found stored in sanitizer between uses. Suggest having a spare set of scissors so you have time to air dry the used set. Do not keep in sanitizer.

Please do not store paper towels used for hand drying in the restroom. Corrected.

Single use beverage cups were stacked on the front counter where contamination from customers is possible. You need to have a recessed cup holder at the front counter.

You need more light intensity in your walk in cooler so you can visually inspect the integrity of your foods.

I observed a cutting board that was excessively grooved and is discolored. Please replace. Corrected on site by replacing with a new one.

The sanitizer bucket in the main prep area had no detectable chlorine in it. Staff need to change out sanitizer solution more often to keep at 50-100ppm at all times. Corrected on site.

You must repair the condensation leak in the walk in freezer asap!!!!
