Pic corrected by discarding bowls of diced tofu and vegetable garnish and has been instructed to keep in cooler at 41°F.
Found wet wiping cloth left on the cutting board of the prep top cooler on the cooking line. To correct keep wiping cloth submerged in the sanitizing bucket.
Wood used on top of storage shelf not sealed to be non-absorbent. To correct seal wood to be nonabsorbent.
Found the floor (under equipment, edges and corners) soiled with accumulation. To correct throughly clean floors and clean on a more frequent schedule.
Observed small children in the kitchen prep area. Pic corrected by having small children stay in back dining area table. Pic has been instructed to keep children out of food handling areas.
Found plastic bottles and spray bottle of oil without labels on the shelf above the prep area. Found storage containers of ingredients without labels. To correct provide labels to all noted items.

(Critical) Used a test kit and found the quat sanitizing solution in the 3 compartment sink at a low concentration. Pic corrected by emptying sink, and remaking sanitizing solution to manufacturers specification of 200 ppm. Pic has been instructed to use test kit to monitor that sanitizing solutions are at proper levels
Found the counter above and around the cooking range soiled with build up and accumulation. Found the top of the knife holder soiled. To correct clean as soon as possible, and clean on a more frequent schedule.

Found a kitchen stand/table partially blocking handsink on the cooking line. Found a large plastic colander left in the handsink besides the 3 compartment sink. To correct move/relocate items so handsinks are easily accessible at all times.
Found employees personal food stored on counter tops through out kitchen areas. Pic corrected by placing food items in a designated area.
Found tongs and other equipment used on the cooking line stored on top of egg tray on the counter top above kitchen range. To correct clean and sanitize utensils and store utensils in a more protected manner.
Found the drain line under the 3 compartment sink leaking. To correct repair drain line. Found plastic film wrapped around the drain lines of the prep sink and the 3 compartment sink. Pic corrected by removing plastic film.
Found the back handsink on the cooking line not easily accessible with a equipment shelf partially blocking handsink. Owner states other handsink is used more often. To correct relocate equipment shelf so handsink is easily accessible.
Found wet wiping cloth left on the counter top of prep top cooler. To correct after use, store wiping cloth in sanitizing bucket completetly submerged
Found the interior and door seals of microwaves in the kitchen and sushi prep area soiled. Found the hood filters soiled with a greasy build up. To correct clean as soon as possible, and clean on a more frequent schedule
Found a container of rice cooling covered in the 2 door reach in cooler. Pic corrected by removing plastic wrap to allow the rice to cool rapidly. Pic has been reminded that items must cool from 135°F to 70°F in 2 hours, and then from 70°F to 41°F in 4 hours.
Observed a gap along the back door and the floor. To correct repair/replace door sweep to eliminate gap
