(Critical) I found shrimp tempura in a toaster oven at 97*f. Must be held at 41*f or less or 135*f or greater. Do not partially heat up this product any longer. Corrected by changing practice and discarding this shrimp.
(Critical) Raw shell eggs were stored in the top rail right next to ready to eat foods, creating a cross contamination potential. Raw eggs need to be stored on bottom shelf and not next to any ready to eat foods. Corrected by storing in small glass door cooler on bottom shelf.
One of the staff did not have a hair restraint on when i arrived. She needs to have hair restraint on when working with foods. Corrected.

(Critical) A can of stainless steel cleaner was found stored in a cabinet with dry foods. Store toxic items seperated from foods and food contact items. Corrected by storing in restroom.
(Critical) I found sushi rice from the night before in the unplugged rice warmer and at 70*f. Rice must be kept >135*f of less than 41*f. You folks will need to only keep a very small amount of rice at night and put into cooler. Be sure to re-heat that leftover rice to >165*f in microwave before putting into rice warmer in the mornings. Due to small coolers, only one small container of rice can be saved and cooled at night. Corrected by discarding rice, and following these procedures.

The wood mixing bowl used to make sushi rice in has cracked wood and it is also stained black in areas, therefore it is now time to replace this bowl with a new one by jan 1, 2011
