Observed several pans on the clean utensil storage rack to be stacked wet. To correct, please allow pans to completely air dry prior to stacking.

Observed scoop and cup in bulk container of (sugar?) to be laying jumbled in product. To correct, please remove cup and maintain scoop in container with handle pointing up to avoid contamination of product.

The ice transfer pail was found to be stored upright. Either hang up-side-down with the hook provided or find a lipped tray to prop the inverted pail on to prevent debris accumulation and to facilitate draining of the pail
The low-boy silver king cooler was not maintaining 41f or below. Some ice was observed on the back, interior wall. The evaporator coil may be iced up. Defrost and adjust the temperature dial as needed. Ensure staff do not store phfs in this unit until it can maintain 41f and below
Several of the floor sinks/floor drains in the facility have food debris and/or slime growth on them. Thoroughly clean these areas and at least 2x per week in the future to prevent odors and possible fly breeding areas

(Critical) There was no detectable chlorine residual in the 3 comp sink. Switched from using an ammonia based product to chlorine based. Use chlorine test papers and keep product at 50-100 ppm. Corrected by making up new sanitizer and it is at ~75ppm.
Keep thermometers in all refrigeration units in a conspicuous location. Corrected.
Soft serve ice cream mix in hopper found at 46-48*f. Needs to hold product at 41*f or less. Do not serve ice cream today and monitor temps all day to see if comes down to 41*f or less. If it does, dump product, clean and sanitize hopper and use fresh product. You will need to be sure to turn on unit well ahead of time of stocking it to assure unit has cooled down enough. E-mail me your findings later on this afternoon! this unit was just brought in 2 weeks ago.
The drain line for the water filter system was not air gapped. It slipped out of the "zip tie". Use a hose clamp to secure it up to provide the required air gap on the drain line. Temporarily secured it up using plastic zip tie.

(Critical) I observed 4 dented cans on your dry goods rack. You need to seperate dented cans and label an area for returns for dented cans. Corrected on site by pulling pulling and labelling them for return.
No sanitizer bucket was made up in the store to keep wiping cloths in. Be sure you have a sanitizer bucket made up at all times you are open. Corrected.
(Critical) The juice gun nozzle was moldy on the diffuser. Staff must be taking the pour spout off every 24 hours and cleaning it. Corrected on site by washing, rinsing and sanitizing.
