All food contact surfaces of equipment must be in good condition and smooth and cleanable at all times. To correct, need to discard all bread forms that show any signs of damage. Pic corrected by discarding damaged bread forms at time of inspection. Violation corrected.

Observed interior panel/faceplate in microwave oven in poor repair (panel not secure/keeps falling down). To correct, please repair microwave oven as soon as possible

(Critical) Observed all meatballs and marinara sauce in steam table on make line with internal food temperatures of 105-115f. Meatballs were reheated an hour ago in microwave oven an hour ago per pic, but pic did not take internal food temperatures after reheating. All phf must be rapidly reheated to 165f within 2 hours. Pic corrected by reheating meatballs and marinara sauce in microwave oven to 165f and returning to steam table at time of inspection. Violation corrected

(Critical) Observed backup pans of rte tuna fish, pre-cooked chicken strips and chicken breasts in wic and in ric under microwave oven with no datemark labels. All potentially hazardous rte foods must be labeled with a 7 day consume by datemark label (day 1 is prep/open date). All above mentioned food items were opened/prepped yesterday per pic, so pic corrected by properly datemarking all rte tuna fish and chicken at time of inspection. Violation corrected

(Critical) Meatballs and sauce not reheated to proper temperature. Cooked and cooled potentially hazardous food shall be reheated for hot holding so that all parts of the food reach a temperature of at least 165°F for 15 seconds. Corrected at time of inspection by discarding meatballs and sauce in hot holding well. There was very little product in pan; sauce was found at 146°F; meatballs found at 90°F - 100°F temperature range. When reheating please make sure all parts of the food, including the interior temperature of all meatballs reach a temperature of at least 165°F for 15 seconds.

Two door prep unit front counter not maintaining temperature. Refrigeration shall be capable of maintaining food at 41°F or below; ambient air temperature found at 56°F. One bag of opened banana peppers stored in this unit at time of inspection. Per pic not using this refrigeration unit for potentially hazardous food storage. In future if unit to be used for potentially hazardous food storage must be capable of maintaining food at 41°F or below at all times.
