(Critical) Meatballs with sauce found at improper temperature in hot holding unit. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection pic properly reheated meatballs with sauce to >165°F in microwave oven; stirring, covering and letting stand for >2 minutes after reheating; checked temperature of several meatballs to confirm all parts of the food reached a minimum 165°F. At time of inspection hot holding unit had not been turned on at opening; per pic meatballs with sauce had been reheated properly; were placed in unit approximately 30 minutes prior to inspection when they were found at 118°F - 120°F. Hot holding unit turned on to proper setting to maintain meatballs with sauce at a minimum 135°F

Please re-establish air gap for ice machine drain line, currently air break. The air gap shall be twice the pipe diameter above the flood rim of the receiving receptacle. Owners on site end of inspection discussed extending drain line farther out from wall to be able to provide a larger receiving receptacle to make it easier to maintain air gap and to clean the drain
