Corrected at time of inspection by showing pic how to use their quat test kit to monitor quat sanitizer concentration. Pic will show all staff how to use quat test kit
(Critical) Meatballs and sauce found at improper temperature in hot holding well front serve area. Corrected at time of inspection by discarding meatballs and sauce found at 114°F. Water temperature in hot well found at 113°F. Appears the hot holding unit was not turned on at the electrical strip. At end of this inspection hot water temperature in hot holding well found at 140°F.
(Critical) Person in charge not ensuring that employees are properly sanitizing cleaned dishes and utensils before they are reused, through routine monitoring of chemical concentration, temperature and exposure time for chemical sanitizing. Pic will train all staff before follow-up inspection. ,
