These areas in need of cleaning: ceiling fan covers restrooms, interior storage container for sugar/salt packets at the self-service station, top ledge of cabinets at pop dispensing area and area under pop dispensing machine above cabinets. Please clean now and as often as necessary to maintain in clean condition

Some clean dishes found stacked wet. Please provide additional shelving to properly air dry/drain all clean dishes and utensils before stacking for storage (especially for black insert pans)

Please do not store condiment packages under/next to handwash sink drain line front counter cabinet

Please relocate existing thermometer which is located top rear section of upright reach-in-cooler in dining area making it difficult to read or provide an additional thermometer that is placed for easy viewing

Inadequate light intensity in walk-in-cooler. Please provide highest wattage light bulb that will fit in this light fixture and do not store any boxes in front of light fixture

Proofer leaking at bottom. Please replace gasket to eliminate leak. Per pic new gasket has been purchased, to be installed

Some waste behind dumpsters in dumpster enclosure. Please keep the dumpster area clean. This is a shared dumpster, spoke with other restaurants in this plaza at time of inspection

Stack of trays found stored wet. Please provide adequate shelving to allow all dishes and utensils to air dry before stacking for storage

Please relocate or provide additional thermometer in true upright reach-in-cooler in dining area and place for easy viewing. Existing thermometer is on top shelf at the rear of unit, bottled pop is blocking the thermometer from view. Since potentially hazardous food items (milk and yogurt) are stored in this unit the temperature shall be monitored several times daily

Some flies observed in a few areas rear kitchen. Please continue with deep cleaning, including all drains to eliminate the flies. Facility recently had grease waste receptacle cleaned and repaired leak under walk-in-cooler. Grease waste receptacle on a 2 month cleaning schedule

Critical corrected: at time of inspection set aside soiled bread trays for soaking; will be properly washed, rinsed, sanitized and air dried before placing on clean dish storage rack

These areas in need of cleaning: handle area microwave oven, handle area toasting oven, underside of pop dispenser housing, pop dispensing levers and ceiling fan covers in both restrooms. Please clean now and as often as necessary to maintain in clean condition

Please invert ice transfer bucket on top of ice machine. Provide draining mat to store on or hang ice transfer bucket by hook on side

Please set up wet wiping cloth solution front counter for storage of wet wiping cloths at proper quat sanitizer concentration. Quat test kit available to monitor

Please provide thermometer for front counter 2 door reach-in-cooler and place for easy viewing

(Critical) Some potentially hazardous food items found at improper temperature on top of sandwich make line. Potentially hazardous food shall be maintained at 135°F or above or 41°F or below. Critical corrected: at time of inspection discarded all potentially hazardous food items maintaining >41°F overstacked on top of sandwich make line. Sliced cheese and salami overstacked; egg product found stored above top of pan and small pizzas found stored above top of pan. Food items found as high as 52°F. Remaining food items on top of unit found at 41°F or below. Please store small pizzas in 2 door ric at front counter or provide deeper pan on line. Consider cutting egg product in half so it will fit inside pan (many subways have used this approach to maintain the egg product at proper temperature). Continue to use your thermometer to monitor the food temperatures so you will know how high you can place the food items in the pans. Reminder the trayed deli meats and wrapped deli meats will be more difficult to maintain temperature since the paper insulates the food away from the cold sides of the pan,
