Meatballs & sauce in same hot holding unit found >135°F. When reheating in a microwave oven the food needs to be rotated or stirred, covered and allowed to stand covered for 2 minutes after reheating

(Critical) Observed several pans not properly sanitized after washing before storage for use. The pans were washed and then partially submerged in the sanitizer compartment of the 3 compartment sink. All utensil must be properly sanitized after washing before storage. This includes exposing the food contact surface to the proper temperature and concentration of solution for the manufacturer specified time (quat). During inspection the pic and employee washing dishes were reminded of the proper method for dishwashing using a three compartment sink. The improperly sanitized pans were rewashed and properly sanitized. Item corrected

At the clean utensil storage area adjacent to the three compartment sink observed several clean pans stored and stacked wet. Correct by thoroughly air drying all utensils before stacking for storage. This violation has been observed during previous inspections

During washing of pans observed no rinsing of pans between the wash step and the sanitizing step. Rinsing with clean water after washing must occur to remove detergent from pans. Pic corrected during inspection by rewashing the pans using a proper three step process

At the 3 compartment sink faucet observed the fitting for the chemical tower to be leaking water. The fitting has been wrapped with plastic. Correct by repairing the fitting so it does not leak water

(Critical) Chicken found at 115 degrees f in the steamer. Potentially hazardous foods must be maintained at 135 degrees f or above. Keep the water in the steamer hot enough to maintain food at proper temperature. Temped at 150 degrees f. Chicken was reheated to 165 degrees f at time of inspection

(Critical) Moisturizer found on the prep table next to the tomato slicer. Board cleaner found next to togo boxes in the rear storage area. Keep cleaners and moisturizer stored in a separate area away from foods , prep areas, single service articles and food equipment. Corrected by relocaing the moisturizer and the board cleaners to an approved location

The steamer was found to be holding chicken breast at 115 degrees f. The water in the steamer was at 150 degrees f. Keep water hot enough to hold ph foods at 135 degrees f or above. Corrected by adjusting steamer at time of inspection. At end of inspection water temp in the steamer had elevated to 160 degrees f. Chicken was being maintained at 140 degrees f after reheat.

The reach in cooler was found with an ambient air temperature of 48 degrees f. At time of inspection, pic indicated that the only food items kept in the cooler are the dressings and sometimes during lunch rush may have extra lettuce in the cooler. (lettuce was not in the cooler at time of inspection). The only food in the cooler was commercially prepared dressings. Unit was adjusted at time of inspection. Do not place lettuce in this unit unless the unit is capable of maintaining lettuce and any other potentially hazardous foods at 41 degrees f or below
