(Critical) In the bottom reach in cooler portion of the prep top unit located in the front service area, observed the following improper cold holding temperature of tcs rte foods: 1. Steak at 47 degrees f 2. Ham at 45 degrees f 3. Gyro meat at 48 degrees f pic indicates these items have been in the cooler overnight and were not recently used. Item corrected during the inspection by the pic who discarded the above listed items. The cooler thermostat appears to have been turned to too warm of a setting. The thermostat knob appears to be subject to accidental bumping by food products. Pic turned thermostat to a cooler setting. Temperature inside the cooler at the end of the inspection was between 39 and 41 degrees f.

(Critical) Observed the following tcs rte food items held beyond the marked discard date at the prep top unit in the front service area. 1. Salami dated 1/17 2. Ham dated 1/23 pic corrected during inspection by discarding these food items. Discussed with the pic the importance of using clear indelible dates when date marking food. Some of the observed containers had discard dates on both the lids and the side of the container.

At the front service counter observed lights bulbs without shielding. Correct by replacing the bulbs with proper shielding

Observed the sharpener of the food slicer with an accumulation of food debris. Correct by cleaning now to remove the accumulation of debris

There is a hole in the wall in the men's' restroom. Repair the hole as soon as possible. Strive to address maintenance issues promptly, when they arise

The dipper well is turned off. As discussed, the water must always be running. This is to flush debris off the ice cream scoops and prevent the growth of harmful bacteria in standing water.
