You need to clean the dishmachine and the area around it more often. There is a good amount of lime build-up that needs de-liming.
The sandwich/prep cooler is holding product at 44*f to 46*f. Needs to be holding product at 41*f or less at all times. The condensor coils are full of dust and need to be cleaned. As soon as your lunch rush is over, thoroughly clean the coil and see if the temps come back down.
Please be sure to discard damaged utensils, such as the chipped plastic spatulas.
You need to be cleaning the following areas more frequently: the fryers and under the fryer, inside the convection oven, the drip pans and the area under the briquet grill, and inside the mop closet. Also, please be sure to wipe down the shelves that you store kitchenware on.
