The bottom of a display type ice cream freezer, needs to be cleaned. Clean equipment frequently to prevent food debris build-up

Provide a refrigerator thermometer for the small refrigerator. Check it often, to ensure that the unit, is operating at 41 degrees f. Or below.

The bottom of a refrigerator in the front area needs cleaning. Clean up food spills promptly

Clean the floor around the mop storage area. Clean up work areas frequently, to promote good sanitation in the restaurant.

(Critical) The underside of the shake mixer has dried on ice cream on it. Food contact surfaces must be frequently washed, rinse and sanitized. Cleaning must be a priority, dried on food debris must not be allowed to accumulate. Clean the shake mixers as indicated above. Corrected at the time of inspection. The mixer has been cleaned.

(Critical) I observed a spray bottle cleaner stored on top of the cookie oven. As discussed, all cleaners, degreasers and other toxic products must be stored in a location that is completely separate from your food service operation. Inspect the restaurant frequently to ensure that th corrected at the time of inspection. The cleaner has been relocated as directed above.

The bottoms of the ice cream freezers need to be defrosted and cleaned. Frequent cleaning is required to maintain good sanitary conditions in the store. Non-food contact surfaces must be frequently cleaned.

I observed a bag of cake lids on the floor in the basement. Single service items like these, must be stored six inches off the floor, in a clean and dry location. They must be protected from contamination during storage.

The floor in the back prep area, needs to be swept and then mop. Increase the cleaning frequency for the floors. Routine cleaning is required to maintain good sanitary conditions.

Disposable paper towels are not available for hand drying at the rear hand sink. As discussed, frequent and proper hand washing is critical in preventing the spread of harmful bacteria. Therefore, ensure that every hand sink is supplied with toweling, soap, hot & cold water at all times. Corrected at the time of inspection.
