(Critical) Wash water temperature was found at 99*f. The minimum temperature when washing dishes for the detergent water is 110*f. The temp of the sanitizer needs to be between 65*-75*f. It was found at 98*f. Use thermometer to verify for proper temps when doing dishes. Corrected by adjusting to proper temps.

(Critical) I observed sausage gravy at 103*f in the upright cooler after cooling for 1. 5 hours. You were approved to cool limited foods (sausage gravy and potatoes) in your upright freezer, which is not capable of taking that much heat. You are going to need to come up with the means to safely cool your hot items. Please use the cooling charts to verify safe cooling methods. Be sure to document methods and refrigeration used. I will be back next thursday to verify how you are doing. Product was broken down into smaller portions and put into refrigerators next door(moms licensed facility).

(Critical) Water pressure at the restroom handsink is not adequate enough. You need to increase the water pressure within 10 days. I will be back next week to verify.

(Critical) Cooked hash brown potatoes and sausage were found at 103*f in the oven. Must be held at 135*f or hotter at all times. You need to purchase an additional steam well to hold these items in. Corrected by heating to 165*f and holding in oven at 135*f or hotter. Use your thermometer to verify your holding temperatures.

Please replace the missing floor tiles at the mop sink area by next inspection(6 months).

Please keep squeeze bottle of water labelled.

The drain lines in the basement have slipped down into the drain cup. You need to permanently air gap these lines to be at least 1" above the top of the drain rim cup. Take a picture of this and e-mail it to me by october 1. 2012.

Repair the damaged screens on the back door.

Back of the house staff did not have hair restraints on. Be sure they are wearing one.
