Observed the reach in cooler used to store salad portions without an ambient air thermometer. Correct by obtaining and installing an approved thermometer

At the kitchen main prep line observed the floor under the fryer and cook top with a heavy accumulation of food debris, used utensils, and grease. Correct by cleaning now and on a more frequent basis. Note: pic had floor cleaned by staff during the inspection

These areas in need of cleaning: exterior squeeze bottles and other food containers on cook line, handle area microwave oven and interior utensil containers under prep table. Please clean now and place on routine cleaning schedule

Some working containers of food found without label. Once removed from original container please label with common name of food

Some single-use containers being re-used. Please replace with muti-use food-grade containers

Observed leak under pop machine in dining area. Please repair leak

Please invert single-service containers front counter to prevent potential airborne contamination

(Critical) Observed employee rinsing dish at front counter food-prep sink. All dishes and utensils shall be properly washed, rinsed, sanitized and air dried. Critical corrected: at time of inspection owner set up 3-compartment sink in rear kitchen properly; wash, rinse and sanitize compartments. Facility using bleach; proper test kit is available to monitor chlorine concentration. Please remove rack next to front counter food prep sink to discourage employees from rinsing off dishes. If you need additional drying space please use racks above 3-comp sink or cart with rack next to 3-comp sink (once the conveyor oven that is in rear kitchen is removed this will provide additional room for a rack for drying dishes)

(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found without datemarking. These food items once opened, prepared or removed from freezer shall be clearly marked with the discard date (add 6 days), critical corrected: at time of inspection clearly marked all in-house dressings/sauces. Seafood in table-top coolers not marked, larger container of seafood in wic properly marked. If seafood in table-top units is not served within 24 hours from date opened or removed from freezer please label with discard date

Please remove any unused equipment or unnecessary items stored in rear kitchen. Owner is selling the conveyor oven stored in the rear kitchen

Observed worn glove on top of soup warmer; please do not re-use gloves

Please refinish or paint raw wood shelving units in kitchen

Please cut straw box front counter (or provide shorter container) or straw dispenser for dispensing straws properly without touching mouth-contact end. Please retrieve straw from middle if you change container

(1) please repair or replace paper towel dispenser at dishwash area handwash sink that is jammed. (2) some of the door gaskets in poor repair on prep unit. Please replace to provide good seal and so smooth and easily cleanable
