(Critical) I found a large stock pot of cooked chicken (probably from yesterdays chicken broil) in a cooler and the chicken temped out at 70* to 100*f. Hot foods must be quickly cooled down properly, which would have been spreading the chicken out on sheet pans in single layers and placing in coolers to cool down. Corrected by discarding the chicken.

There is not a metal stem food thermometer in the kitchen. Keep one supplied at all times.
