(Critical) Found time/temperature control for safety (tcs) food, numerous canisters of whipped cream 53°F in the 1 door reach in cooler. Pic corrected by discarding whipped cream, and has been instructed not to use this cooler to hold tcs food, until repaired/replaced to hold tcs food at 41°F. ,

Found the 1 door reach in cooler not holding tcs food at 41°F. To correct repair/replace cooler to hold tcs food at 41°F or lower.

Found several food containers and pans stored upright in the storage room shelves. To correct store containers and pans inverted.

Found several spray nozzles of the dishwashing machine clogged with debris. To correct clean spray nozzles and clean when clogged.

Found lid of dumpster left open. To correct keep lids closed.

Found manager's certification expired. To correct either renew manager's certification or provide another certified manger.

Found the hood filters in the cooking hood soiled with dusty build up. To correct clean hood filters and clean on a more frequent schedule.

Found the spray nozzles of the dishwashing machine clogged with debris. To correct clean spray nozzles and clean when clogged.

Health Report - 05/06/2011 (2 critical incident(s))

(Critical) Used a chlorine test kit and found the chlorine concentration in the dishwashing machine clearly above 200 ppm. To correct have the dishwashing machine adjusted to dispense chlorine at (5o ppm minimum and 200 ppm maximum), and use the 3 compartment sink to wash, rinse and sanitize dishes until dishwashing machine is repaired and functioning properly. Found facility using a non-approved bleach to sanitize food contact surfaces. To correct replace unapproved bleach with an approved bleach, that is one that has an epa registration number and directions on mixing sanitizing solutions for use on food contact surfaces. ,

(Critical) Found a hose connected to a y type shutoff on the utility faucet of the mop sink in the mechanical room without back flow prevention device. To correct either remove y type shutoff valve and install a hose bibb vacuum breaker, or install hose bibb vacuum breakers on both sides of the y type shut off valve. ,

Found accumulation and build up under the wheel/gear of the can opener. To correct thoroughly clean can opener on a schedule to preclude accumulation.

Wall storage cabinets in the main kitchen: observed containers with whisks, ladles and pasta scoops stored in containers with the food contact surfaces extending up out of the storage containers. Please either invert these utensils so only the handle extends upward or utilize a tray/pan for the storage of these oddly shaped utensils with the handles all oriented in the same direction

Observed old spilled food on the spill trays for the range top and the griddle portion of the oven. Please clean these trays now and after each use in the future as needed. You may consider lining these trays with aluminum foil after cleaning them to make clean-up easy
