Please store all chemicals below and away from any food, clean equipment & utensils, single-service items or clean linens. Corrected at time of inspection by relocating sterno stored next to and above food and single-service items to chemical storage area on bottom shelf.

(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found without proper date marking. Once opened, prepared or removed from the freezer these food items shall be clearly marked. Add 6 days to open/preparation date. Corrected at time of inspection by discarding opened cream cheese, opened ranch dip, opened whipped cream and opened half and half. Sour cream is exempt from date marking; see date marking section on document provided "key changes to the michigan food law - 2007" there are several groups using the kitchen. Discussed each group having a designated section in a refrigeration unit. There are several refrigeration units available. If the group meets weekly any food items requiring date marking should be taken home after the event since there is a 6 day discard; the food would not last until the next week

(Critical) Some food thermometers not calibrated properly or found with dead batteries. Please calibrate metal stem food thermometers and provide extra batteries for digital type thermometers. Corrected at time of inspection by removing the 2 digital thermometers needing batteries and one of the metal stem thermometers needing calibration from the kitchen into the church office. Will replace batteries for digitals and calibrate metal stem before being placed back into kitchen. Explained ice bath method to pic. Two of the remaining metal stem thermometers in the kitchen are accurate.

Corrected at time of inspection by discarding opened half & half, 3 opened cans of whipped cream, opened coffee mate and opened cream cheese fruit dip with a date on container of 4/29/13. Discussed which food items need date marking; provided copy of mda document with date marking requirements including exemptions ( sour cream, yogurt, etc. ). The main refrigeration unit front kitchen is where the food items were found without proper date marking. There is so much food in this unit that it makes it difficult to see what is opened or not. For example there were 3 opened whipped creams at time of this inspection. One idea discussed is to spread the food out between groups into 2 refrigeration units so it will make it easier to monitor the food for date marking/discarding when needed

(Critical) Electric can opener blade in need of cleaning. Food-contact surfaces shall be clean to sight and touch. Critical corrected: at time of inspection set aside can opener for proper cleaning and sanitizing before use

(Critical) Some chemical spray bottles found without label. Working containers of chemicals shall be properly identified with the common name of the chemical to avoid misuse. Critical corrected: at time of inspection spray bottles properly labeled or discarded contents

(Critical) Observed some dented cans in dry storage area. Please monitor all cans for dents and set aside for return or discard as needed. Critical corrected: at time of inspection set dented cans aside (that were to be used for soup). Cans will be returned to gfs this week. Provided pic with copy of dented can safety poster

(Critical) Tilapia found at improper temperature in reach-in-cooler. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection several trays of tilapia found between 48°F - 50°F in reach-in-cooler. All other food items in reach-in-cooler found at 40°F. Per pic tilapia transported partially frozen from busch's in saline yesterday; stored in church refrigeration unit until this morning. Tilapia individually packaged in a 10 lb box; per pic tilapia was still slightly frozen today when removed from refrigeration unit; individual bags opened and fish placed on trays; trays then placed in refrigeration unit. Per pic fish trayed less than 2 hours before temperature found during inspection. Relocated all trayed fish to upright freezer; fish found at 41°F in less than half an hour; relocated trayed fish back to refrigeration unit where it will remain until it is ready to be baked

Please provide accurate food thermometer for monitoring temperatures

Some employees observed without hair restraints. Please provide hair restraints for all employees/volunteers when preparing food. Corrected at time of inspection
