Raw animal foods shall be cooked to heat all parts of the food to a temperature and for a time that complies with one of the following methods based on the food being cooked. For gyro meat 155°F for 15 seconds. Critical corrected: at time of inspection adjusted the temperature control on gyro machine; cooked to >165°F then sliced and held in double boiler on flat top grill at >135°F

These areas in need of cleaning: underside of mixer especially behind the metal grate, upright freezer door handle area, microwave exterior including handle area, underside of pop dispenser housing, cabinet area under and next to pop dispensing machine in dining area, interior ring leading to waste receptacles in dining area and interior drain for ice machine/ pop machine dining area. Please clean now and as often as necessary to maintain in clean condition

No hot water at dishwash area handwash sink. Corrected at time of inspection; hot water now available at proper temperature.

Please provide an accurate thermometer on the cook line anb prep kitchen to monitor temperatures. (cooking temperatures, hot and cold holding food temperatures, etc. )

Please set up a permanent dented can storage area for dented cans separate from the area used for food, clean equipment, utensils, linens and single-service items storage

Please cover garnishes near salad station when not in use

Knife found stored improperly between prep table and hot holding unit. Please store in-use utensils in a clean, protected location

(Critical) Observed open cup on front line. Food employees shall drink from closed beverage containers. Critical corrected: at time of inspection removed open cup from front counter area. Discussed with pic use of closed beverage containers to prevent potential contamination

(Critical) Some in-house sauces found at improper temperature. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection discarded in-house sauces found at 49°F - 50°F in squeeze bottles. Facility was storing sauces in metal pans top of prep unit at proper temperature and dispensing with ladel. Will begin using metal pans and maintaining sauces at 41°F or below until lab confirmation determines whether sauces are potentially hazardous or not.

(Critical) Food-contact surfaces of slicer in need of cleaning. Food-contact surfaces shall be clean to sight and touch. Critical corrected: at time of inspection slicer cleaned and sanitized properly. Please continue to monitor for cleanliness. Recommend cleaning immediately after use
