(Critical) Observed cooked pasta 45f and facility made spinach dip 80f that were cooked the day before and still in the cooling process, located in the walk-in cooler, in tightly sealed containers. Cooked potentially hazardous food shall be cooled: (1) within 2 hours from 135f to 70f; p and (2) within a total of 6 hours from 135f to 41f or less. P to correct: discard the noted food and discontinue cooling food in sealed containers. Corrected by the person in charge discarding the noted food and stated that they would cool the food in containers that are not sealed and check the temperatures throughout the cooling process to ensure that the food cools properly within the above noted time frames.
(Critical) Found several phf with improper datemarking system using 8 days instead of 7 days. Corrected - dates were changed to reflect proper dates. Staff was instructed on proper datemarking using 7 day total
(Critical) Found three of four probe thermometers out of calibration. Corrected - all thermometers were calibrated at the time of this inspection. Calibration must take place more frequently
(Critical) Found wiping cloth bucket to have a concentration of chlorine sanitizing solution above 200 ppm. Corrected - staff remade solution to correct level of 50 - 100 ppm
Found crumb tray and grease bin under burners and flat top to have an accumulation of food debris on/in them. Corrected - pic had staff change out foil on crumb trays and empty grease bin for flat top at the time of this inspection
(Critical) Found reach-in unit in kitchen to be holding phf's at 47*f. Corrected - phf's such as whipped butter, sour cream and yogurt were discarded. Other contents moved to the walk-in unit. Service technician was called during the inspection and is expected to arrive within the hour. A follow-up inspection will be performed after january 2, 2013 to confirm unit is holding at 41* f or below.
Found probe thermometer reading 3* f high. Corrected - pic recalibrated the thermometer at the time of this inspection.
Found knoves and other utensils stored on/in a cloth/vinyl storage case, opened flat on a rolling cart. The storage case had an accumulation of crumbs and food debris on it. To correct - these untensils must be stored in a container that is durable and cleanable. The cloth/vinyl case is not an appropriate container
Found dented can of artichokes that was in general storage with other cans. Corrected - pic discarded dented can. In the future, segregate any dented can to a designated area until the can is returned for credit or discarded
Found bucket of bbq sauce stored directly on the floor of the wic. All food items must be stored at least 6" above the floor. Corrected - pic placed bucket on shelving
