To correct move the noted item down and away from all food, equipment, utensils, linens, and single-service and single-use articles. Observed the following not sealed to the wall: 1. Three compartment sink. 2. Dishwashing drain boards. Equipment that is fixed because it is not easily movable shall be installed so that it is: (1) spaced to allow access for cleaning along the sides, behind, and above the equipment; (2) spaced from adjoining equipment, walls, and ceilings a distance of not more than 1 millimeter or one thirty-second inch; or (3) sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage. To correct seal the noted items to the wall using silicon
(Critical) 4 cans of "sterno" found stored on top of and next to food equipment (roaster and coffee lids etc. ) in lower cabinet by pass thru window. Re-locate to an area below and away from food and food equipment. To prevent possible contamination. Corrected at time of inspection by removing from area and storing correctly. ,
(Critical) Found a leftover subway sandwich stored on the youth group shelf in the refrigerator without a date on it. Corrected - sandwich was discarded. All food items of this nature (leftovers) must be datemarked with a 7 day discard date, or placed on the "staff only" designated shelf on the left side of the refrigerator, or, maybe more appropriately not kept in the church refrigerator, but taken home by participants
Found the light fixture in the storage room where bottled water and single service items are stored to have a missing light shield. To correct - replace the missing light shield over the flour. Bulbs to protect against breakage and potentially falling into/onto food/single service items
The crumb tray under the 6 burner stove has dried on food debris from a previous spill/boil over. Also, the interior of the microwave has an accumulation of food debris on the sides and dish on the bottom. To correct - clean these two areas now and keep on a more frequent cleaning schedule in the future
(Critical) Found hand sink in kitchen without required paper towels for hand drying as the towel holder was emptied and locked. Corrected - paper toweling was provided and placed on the counter at the hand sink. For the future, the 2009°Food code requires paper towel be available at each hand sink location.
(Critical) Found ambient air thermometers (thermocouples) located outside the refrigerator/freezer to be not working. To correct - repair/replace these thermometers. A follow-up inspection will be performed in 10 days (on/about april 14th) to verify correction.
(Critical) Found kitchen to be without a probe food thermometer or a needle probe used for thin mass foods at the time of this inspection. This new requirement was discussed at the last routine inspection. To correct - provide a probe and a needle probe suitable for thin mass food to remain in the kitchen or at least be accessible for staff to produce during these routine inspections. The thin mass needle probe thermometer will likely need to be ordered through food service equipment distributors, try restaurant equippers. Com. A follow-up inspection will be performed in 10 days (on/about april 14th) to verify that these items are avaiable in the kichen
(Critical) Found packaged cheese slices in the refrigerator that were moldy. Correctted - it is not clear if this food item is personal food belonging to an employee, or left over from a church event. Moldy food item was discarded.
Found single service items, paper plates, napkins loose in the lower cabinet under the phone. To correct - please provide containers or wrapping for loose single service items in this location.
Found food that belongs to staff unlabeled and not separated from general food service food items. To correct - provide a designated space/shelf within the refrigerator that is clearly labeled for employee use only

The current food service license is not posted in the kitchen. The license posted expired on 4/30/12. To correct - please post the current 2013 or new 2014 license asap
Found cases of bottled water and also 5 gallon containers of bottled water stored directly on the floor of the storage room. To correct - store all food items at least 6" above the floor on shelving or dunnage racks

Found no anti-chiking poster available in the kitchen at the time of this inspection. To correct - please obtain the required anti-choking poster from the american red cross and post in the kitchen
Found both men's and women's restrooms closest to the kitchen to be without the required handwashing signage. To correct - provide required handwashing sign in each restroom reminding kitchen personnel to wash their hands before leaving the restroom. I provided one such sign at the time of this inspection. This can be copied and placed in the other restroom
Observed top of dishmachine (exterior) with an accumulation of scale and debris. To correct, please clean now and on a more frequent schedule
