(Critical) Sliced tomato found on top of lid on top of container on the top section of the prep unit at 48 degrees f. Potentially hazardous foods must be maintained at 41 degrees f or below. Corrected by discarding foods if not consumed within 4 hours of temperature control. Will keep tomato in the upright display case from now on.

Chili is being cooled in a large roaster style pan covered in the cooler. Cool uncovered in a shallow pan no more than 2" deep or with smaller ice wands which will need to be purchased (only the large ones are available which are too large for cooling the chili). Cool rapidly from 135 to 70 in 2 hours and 70 to 41 degrees f in an additional 4 hours. Utilize shallow pan method or ice wands as discussed to achieve rapid chilling as indicated above.
(Critical) The splash guard inside the ice machine and a portion of the ice bin on thei ce machine in the basement has mold build up. Clean now and place on a more frequent cleaning schedule.

The handsink was blocked for access for routine handwashing by pots and pans in front of the sink. Relocate away from handsink so that the handsink is accessible for routine handwashing. Corrected at time of inspection by reorganizing the pot pan storage rack.
Grease leak in cool area. Repair and once repaired clean up the area where grease has been leaking.
