(Critical) (1) cooked shredded potatoes found in pan on window ledge at improper temperature and (2) french toast batter found at improper temperature in one door pepsi reach-in-cooler. Potentially hazardous food shall maintain at 41°F or below or 135°F or above. Temporarily corrected at time of inspection by: (1) discarding shredded potatoes found at 67°F. (2) discarding french toast batter found at 52°F in one door pepsi reach-in-cooler. Pan of shredded potatoes stored on window ledge because 2 door lift top prep unit is being repaired at time of inspection; no food is stored in prep unit. Unit has been removed from the kitchen to the dining area for repairs. Per pic facility had been using ice on top to maintain food items <41°F until repair person on site to repair unit. Remaining potentially hazardous food items being stored in one door pepsi cooler on cook line or in walk-in-cooler maintaining at proper temperature. Begin using ice bath for french toast batter if left out on counter. Currently using ice bath for pooled eggs; maintaining <41°F at time of this inspection

Corrected at time of inspection by relocating raw bacon below any ready-to-eat food items in refrigeration unit

Paper towel dispensers not in use at front counter handwash sink, men's public restoom handwash sink and women's public restroom handwash sink. Please provide paper towels in paper towel dispensers that can be easily dispensed
Small fryer and flat top grill not under mechanical ventilation on cook line in kitchen. Please provide adequate ventilation as stated in report on 8/7/12 and 6/7/13. As stated in 6/7/13 report "if new exhaust is not installed then equipment that is not completely under the exhaust hood must be discontinued" spoke with supervisor, kristen schweighoefer, regarding correction of stated violation. She has contacted the saline building department and saline fire departement. A site visit will be conducted by the saline building department. Correction needs to be made asap or enforcement from our department will be initiated.
Concrete under and wall behind the grease waste receptacle in dumpster area in need of cleaning. This is a commonly shared grease waste receptacle; will discuss with other user. Please clean now and as often as necessary to maintain in clean condition

Some fruit flies evident in rear kitchen near mop bucket and in mop sink area and some house flies present. Continue to work with your extermination company to eliminate the flies. Keep all areas clean and dry. You may hang fly strips in non-food areas.
Wood used in bbq smoker is stored directly on concrete surface outside. Wood shall be stored above the ground on a rack that is at least 6 inches above the surface. This shall be done to eliminate possible rodent harborage
