(Critical) Observed 2 wrapped housemade rte egg salad sandwiches stored directly on top of box of raw fish in wic. (Critical) Observed small pot of rte chili in soup warmer in prep area with an internal food temp of 128f (warmer was turned off and water level was too low at time of inspection). Also observed rte coney sauce in crock pot in front counter serve area with an internal food temp of 130f. Staff member indicated that chili and coney sauce were reheated on stove less than hour ago. All phf must be held at 135f or more at all times. In order to keep food out of the temp danger zone, staff must ensure that all hot holding units are turned on and holding proper temperature before placing phf into units. (Critical) Observed staff not reheating phf (housemade chili) to proper temperatures. Staff member indicated that she reheated chili to 152f on stove this morning. Temp log book on counter next to soup warmer also indicates that staff are reheating chili to inconsistent temps. For the month of may, staff temps varied from 150f to 165f. All phf food must be rapidly reheated to 165f or more within 2 hours. Please retrain all staff on proper reheating procedures. Also observed several containers of deli meats in wic with no datemark labels. All phf rte housemade salads, dressings and deli meats must be used or discarded within 7 days (day 1 is prep/slice date).
