Ceiling above the prep table, located above the center island prep table. 4. Floor under the steam tables, located in the serving area. Physical facilities shall be cleaned as often as necessary to keep them clean. Correct by cleaning the noted areas and maintaining them clean and free of build up

(Critical) Found the can opener blade to have an accumulation of food debris on the cutting surface and around the blade area. Corrected - pic thoroughly cleaned the can opener blade at the time of this inspection. Staff was shown how the blade can be removed for cleaning. The blade should be removed each time the opener is cleaned

Found two wiping cloth sanitizing solution buckets to be too low in concentration. Corrected - pic discarded and made new solution that was at the proper concentration. Make sure concentration is checked with test strips each time water is added or new solution is made. The sanitizer in the third compartment of the sink was at the required concentration

(Critical) Found house-made sweet and sour dressing in wic with an expired date of 9/22/11. Pic corrected by discarding food item at the time of this inspection

Found one ceiling tile above the desk in the kitchen to be moved, exposing electrical components. Also found one light shield in dry storage area hanging loose. To correct - have school building maintenance replace cieling tile and light shield

Found no anti-choking poster displayed in kitchen or cafeteria. To correct - obtain anti-choing poster from the american red cross and display in kitchen

(Critical) Observed food contact portion of slicer blades in back kitchen area with an accumulation of dried on food debris. Pic stated that slicer is broken and she cannot fully remove blades to wash and sanitize as required. Pic stated that facility has been using pre-sliced deli meats until slicer is properly repaired (repair order has not been submitted yet). All food contact surfaces of equipment must be washed, rinsed and sanitized after every use and must be clean to sight and touch. To correct, please repair or replace slicer so all surfaces can be washed and sanitized after use. Pic corrected by washing and sanitizing slicer components in place and submitting repair order to food supervisor at time of inspection. Pic stated that slicer will remain out of service and facility will only use pre-sliced deli meats as needed (reviewed menu. . . Currently only serving deli meats 1-2 times/month)

Observed slicer blade removal knob/handle on slicer base in back kitchen area broken (appears threads are stripped). As a result, slicer blades cannot be disassembled after use. To correct, please repair or replace slicer/slicer components as soon as possible. Facility to only use pre-sliced deli meats until slicer is repaired.

Observed wiping cloth solution in bucket in prep area with a concentration of less than 25ppm of chlorine. All wiping cloth buckets must be mixed per manufacturers directions (50-100ppm) and concentration verified with proper test strips as needed. To correct, please remix buckets more often and verify with proper test strips

Observed blower/condenser ventilation cover in wic with an accumulation of dust and debris. To correct, please clean now and on a more frequent schedule
