(Critical) Observed the following: 1. No air gap on the three compartment sink where produce is washed, 2. No air gap on the ice machine, located in the back room. A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Correct by providing a one inch or 2x the pipe diameter air gap between the end of the drain line and the flood rim of the floor drain. ,

(Critical) Found several cans in dry storage room that were dented. Corrected - dented cans were removed from general storage and relocated to the new dented can shelf away from general can storage.

Please re-establish air gap for ice machine drain line rear kitchen; currently air break. The air gap shall be twice the pipe diameter above the flood rim of the drain

Please store mops and brooms in an organized manner to facilitate cleaning the area used for storage. Racks are available

Improper cooling method in use for cooling hot potentially hazardous food items. Please use one or more of the following methods listed to cool potentially hazardous food from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. Corrected at time of inspection by rolling back aluminum foil tightly covering three third pans. Pic had partially heated some food items then changed her mind to serve different hot food items today. Food items found >70°F at 10:45 am; at end of inspection after rolling back aluminum foil food items found from 45°F - 56°F. Please continue to monitor to assure food cools properly

These areas in need of cleaning: underside of pop dispenser housing and interior floor drain and surrounding area under ice bin front counter. Please clean now and as often as necessary to maintain in clean condition. Discussed with pic to get better access to floor drain for cleaning; currently small access hole cut out in bottom of cupboard

Please provide proper quat test kit to monitor quat concentration. On quat bottle states use of qt-10 test kit

Dry goods shelves need to be a minimum of 6" above the floor.

Assure staff clean interior of microwave often throughout the day.

Keep wiping cloths in sanitizer buckets between uses. Keep a sanitizer bucket in the grill area.

Don't use portion cups as dispensing utensils.

The dumpster needs to be on a concrete/asphalt pad.
