Discussed and pic demonstrated using one gloved hand to retrieve raw hamburgers, seasoning with clean ungloved hand, placing raw hamburger on grill with gloved hand, removing glove & washing hands; remove cooked hamburger with designated spatula

(Critical) Some potentially hazardous food items found at improper temperature on top of reach-in-cooler across from grill. Temporarily corrected at time of inspection by discarding all potentially hazardous food items on top of unit maintaining >41°F; food items found at 49°F - 50°F. The bottom of unit maintaining food at 41°F. Per pic the top rail is shut off at night. Air conditioning in kitchen is being repaired at time of inspection. Appears the combination of the heat from the grill, the lack of fully operating a. C. In the kitchen and not enough time for the unit to come down to temperature after being turned on this morning allowed the food brought from the wic this morning to be at improper temperature. Wic maintaining food at 39°F - 40°F. Dropped pans in ice water on top of rail to maintain food at 41°F or below until unit comes down to proper temperature. At end of inspection food maintaining at proper temperature with the ice; please continue to add ice as needed and keep the ice level above the food level. ,

(Critical) These areas in need of cleaning: interior bulk food bins rear kitchen, interior top section microwave on the left when facing microwaves on the right side of cook line and interior some utensil containers clean dish storage rack, including some utensils, dishes in these containers. Food-contact surfaces shall be clean to sight and touch. In addition a pan and some lids blocking the bottom section of the dishmachine, preventing the dishmachine from cleaning the dishes properly. Bowl sent through to check heat tape found with soiled water inside bowl. Partially corrected at time of inspection; utensil containers and dishes in containers set aside for cleaning and sanitizing; one bulk food bin set aside for cleaning and santizing; interior microwave oven properly cleaned and sanitized. Dishes removed from the bottom of the dishmachine to allow for proper wash/rinse/sanitize. Will check cleanliness of bulk food bins and new storage set up for clean utensils at follow-up inspection. ,

In future pic will pre-portion half and half in small metal creamers and store under refrigeration maintaining at 41°F or below at all times or use the uht creamers that do not require refrigeration

(Critical) Hose with atmospheric vacuum breaker found with spray nozzle attached in dishwash area. Corrected at time of inspection by removing spray nozzle. Spray nozzle must be removed when not in use. You may also install a pressure vacuum breaker a minimum 6 inches above the highest point of use or an rpz at any level (asse 1020, 1056, 1013) and keep the spray nozzle on

(Critical) Handwash sink end of cook line closest to grill not accessible for handwashing. Food container and wrapped food item in bottom of sink. Handwash sinks shall be accessible at all times and used only for handwashing. Corrected at time of inspection by removing items from handwash sink. Discussed with employees

Sink stoppers missing from two of the sinks at the bar 3-compartment sink manual warewashing operation. Please provide sink stoppers for all of the sink compartments

Using single-service cups for dispensing in bulk food bins. Please provide durable, food-grade scoops with handles for dispensing

Critical corrected: at time of inspection discarded all seafood maintaining at improper temperature. It appears the breaker was tripped. At end of inspection unit maintaining at proper temperature. (2) whipped butter and sour cream on ice at waitress station observed at improper temperature; top of food items found at 55°F- 56°F. Critical corrected: at time of inspection whipped butter and sour cream discarded. When using ice to maintain a potentially hazardous food at 41°F or below the ice level must be higher than the food level and the ice should touch all sides of the container. Station set up again properly with ice above food level and surrounding each container

Chemicals shall be in a separate location away from and below any food, clean equipment & utensils, single-service items and clean linens. Critical corrected: at time of inspection chemicals relocated to bottom shelf away from and below single-service items stored in the same area. Critical corrected: at time of inspection discarded potentially hazardous food items on right side of salad bar found at 48°F - 50°F. Per pic right side of unit going through defrost cycle. Please contact refrigeration repair company. Potentially hazardous food must maintain at 41°F or below at all times. Monitor food temperatures and relocate phf if necessary until repaired

(Critical) Glasses at bar not in sanitizer compartment of 3-compartment sink for proper contact time. Critical corrected: at time of inspection placed all glasses and utensils in the sanitzer compartment of 3-comp sink at bar for 2 minutes, proper contact time as stated on manufacturer's label use instructions. Sanitizer concentration at proper level

(1) observed standing water under ice bin at bar. Please repair leak and maintain in good repair. Per pic scheduled to be repaired. (2) pop gun holder at bar near ice bin not draining properly. Please adjust so pop gun overflow drains properly into drain. (3) observed standing water behind beer overflow tray at bar. Please repair any leaks and maintain. (4) two door upright reach-in-cooler leaking; water evident on bottom of unit. Please repair and maintain. (5) one door reach-in-cooler on cook line leaking; water evident on bottom of unit. Please repair and maintain. (6) replace hose at mop sink found cracked. (7) one of the ice machine drain lines does not terminate over floor drain. (8) observed employee spraying off soiled equipment on floor in dishwash area with hose. Please discontinue this practice which is creating a safety issue with the slippery floors and causing water build-up on floors which is damaging the floor tiles and caulk

These floor areas in poor repair or missing grout: floors under bar ice bin, floors at entrance to walk-in-cooler, floors in dishwash area near dishmachine floor drain and in other areas in dishwash area. Please repair any plumbing issues, causing water build-up and repair floors, regrout as needed to provide smooth, easily cleanable floors throughout

Handle area some microwave ovens and refrigeration units on cook line in need of more frequent cleaning

Area behind dumpsters in need of cleaning. Please store ladder on brackets off the ground or in another location to make it easier to clean behind the dumpsters and to prevent a potential harborage condition for insects and rodents

(1) re-caulk mop sink as needed to provide good seal between sink and wall. (2) re-install toilet tissue dispenser in employee restroom so it is secure on wall

Replace blue trays and any lids that are cracked or worn on the edges. They are no longer smooth and easily cleanable

Some flies observed near beer overflow drain in cabinet at bar. Please contact your extermination company for assistance in eliminating the flies

Please provide separate containers for tong storage or different food containers to prevent tongs from laying in the food. Consider signs instructing customers on proper tong storage or additional monitoring by staff at salad bar

(1) please re-establish the air gap at ice cream dipper well drain line; currently an air break; appears the bracket has come loose from the wall. The air gap shall be twice the pipe diameter above the flood rim of the drain. (2) leak at faucet handwash sink end of cook line across from ice cream freezer. Please repair.
