(Critical) Observed soy milk in a container at 73f, and there was no discard time provided on the container. Corrected by discarding. Your "time as a public health control" standard operating procedure indicates any potentially hazardous food will be discarded if it reaches 70f, if the product has been out of mechanical refrigeration control for more then 6 hours or if the product is lacking a discard time. Ensure your staff are familiar with your procedures and that these procedures are being followed

Observed the small espresso machine food thermometer to be out of calibration by +/- 8-10f (reading too cold). Corrected by re-calibrating this unit

The bottle of bleach sanitizer no longer contains chlorine. Chlorine is not very stable at elevated temperatures, nor in sunlight. Provide fresh sanitizer daily, verify the concentration with test papers and store it in a cool location out of the sun.

Observed a wet wiping cloth stored on a counter. To prevent bacterial growth between uses, this cloth needs to be stored in a container of sanitizer at proper strength

Observed a counter top coffee grinding machine in use on the concrete floor. Temporarily corrected by discontinuing the use of the grinder. In the future, ensure this equipment is elevated off of the ground by at least 6 inches
