(Critical) The hot water at the handsink was not reaching 100 degrees f. A minimum of 100 degrees f is required for proper handwashing. There is a regulator on the hot water that may not be properly adjusted. Repair/replace to provide hot water by 8/25/2013. Correct asap by 8/16/2013. ,

The cutting boards for the outside grill are in need of replacemnt as they are no longer smooth and cleanable. Replace cutting boards (prior to 2014 season),

Split gasket on the reach in cooler door by the grill. Replace split gasket. Once gaskets are torn they are no longer cleanable.

Hot water temperature for the hot water for the handsink in the unisex restroom behind the concession stand reached 77 degrees f. A minimum of 100 degrees f is required. There is a regulator on the hot water side. Repair or replace or adjust regulator to provide a minimum of 100 degrees f water.

The bulbs in the cinnamon stick warmer were not plastic coated or shileded. Possibly coating has come off the ublbs. Provide plastic coated bulbs to minimize potenital for glass fragments to get onto foods if bulb should shatter.

Unused togo containers on shelves in dry storage. Provide a plastic tub with lid to keep togo containers in to minimize airborne contaminants. Correct by 2012 season

(Critical) Cutting board and knife used for cutting chicken at the grill are not being cleaned/sanitized on proper frequency. Must wash rinse and sanitize a minimum of every 4 hours. Change out cutting board and knife every 4 hours or less. Correct immediately by replacing with clean cutting board and knife.

(Critical) Employee at oudoor grill drinking from open cup. Open cups are prohibited in food prep areas. Provide a cup with lid and straw to minimize hand to mouth contact. Corrected by discussion and discarding open cup and providing cup with lid and straw.

(Critical) Cheese storage unit ws found to be storing cheese at 120 degrees f hot holding. Ph foods must be maintained at 135 degrees f or above. This unit is ordered out of service for the storage of ph foods. Corrected by discarding cheese at time of inspection. Unit must be replaced priori to next season.

(Critical) Stainless seel cleaner found on the storage shelf with foods and food contact surfaces in the rear storage area. Store cleaners separtely away from foods. Corrected by reolcating cleaners away from foods.

(Critical) Hot dogs found in the warmer at 126 - 128 degrees f. Ph foods must be maintained at 135 degrees f or above. Corrected by consuming within 4 hours of removal from temperature control or discarding. Warmer was adjusted at time of inspection.

(Critical) Cheese dispensing unit found to be dispensing nacho cheese at 110 degrees f. Ph foods must be maintained at 135 degrees f or above. The unit is ordered out of service but may be used to dispense cheese under time control only until replaced. Units must be replaced asap but prior to next season. Mark time the cheese is placed into the unit and consume or discard within 4 hours. Corrected by discarding cheese at time of inspection

The blender is leaking. Hose may need to be replaced. Repair or replace asap prior to 2011 season.

The cheese storage unit is not holding cheese at proper temperature. Cheese found at 120 degrees f. Ph foods must be maintained at 135 degrees f or above. Corrected by discarding cheese and unit is ordered out of service for the storage of ph foods. Replace unit.

The hot dog warmer was not adjusted properly to hold hot dogs at 135 degrees f or above. Hot dogs found at 126-128 degrees f in both drawers. Corrected by adjusting unit to hold ph foods at 135 degrees f or above.

The cheese dispensing unit was not holding foods at proper temperature of 135 degrees f or above. Food found at 110 degrees f. This unit must be replaced and is ordered out of service for the storage of ph foods.

Employee at the grill was not wearing proper means of hair restraint. Correct by providing and using a hat. Proper means fo hair restraint is required to minimize hair getting onto foods.

(Critical) The 3c sink is not in complaince for dishwashing. Set up as discussed with wash, rinse and sanitize using quaternary ammonium. Provided sticker for proper set up and corrected by setting up sink properly at time of inspection

Pest control strips for flies improperly located i storage prep areas and filled with flies. Relocate to reote areas including hallways, office, walls by doorways etc where flies cannot accumulate over prep area or food contact surfaces

Dirty tub found for storage of foods and gloves. Clean storage tub and place on a more frequent cleaning schedule.

Spray bottle for water for pretzels found unlabelled. Properly label water as to it's contents to avoid mis use.
