Top section of larosa 3 door prep unit observed with excess frost. Please defrost and maintain. Some water pooling in bottom of food containers
Please provide paper towels in paper towel dispensers at front counter handwash sink and employee restroom handwash sink
These areas in need of cleaning: floors under some cooking equipment, area under grill, front of oven door, interior microwave oven bottom section, employee restroom handwash sink and floors under shelving and near rear door in rear storage area. Please clean now and as often as necessary to maintain in clean condition
Please provide accurate food thermometer. You may calibrate your metal-stem thermometer; discussed ice bath method and/or replace battery for digital thermometer. You should be monitoring food temperatures in all refrigeration units, hot holding temperatures, cook-off temperatures, cooling temperatures and reheating temperatures
(1) please re-establish air gap for ice machine drain lines, currently air break. The air gap shall be twice the pipe diameter above the flood rim of the drain or a minimum one inch. (2) handwash sink in employee restroom draining slowly. Please repair and maintain
(Critical) All the desserts in the display cooler were at unsafe temperatures (55*f). Must be holding 41*f or less. Items were discarded. Do not use this unit to hold any potentially hazardous foods until repaired. I will be back in 2 weeks to verify it has been fixed. Call or e-mail me when ready. All phf's were discarded.
(Critical) Several cold salad items not date marked (tuna, chicken, cole slaw). Also, the feta and cream cheese was not date marked. Date mark all desserts that are potentially hazardous also. You all need to be using the same date marking system throughout the facility. Items marked were opened on tuesday (when store first opened) so i didn't make them throw it out. I will be back in 2 weeks to verify date marking compliance.
Mop must be hung up between uses. Provide a mop holder in the bathroom where mop sink is.
Provide a shatterproof light bulb in the true upright cooler by the grill.
