(Critical) Found ready to eat (rte), time/temperature control for safety food, portioned cheese cake slices, cut watermelon, opened package of corned beef without 7 day datemark. Pic corrected by providing 7 day datemark ( day prepared + 6 days) for rte, tcs food.

(Critical) Found students selling tcs food, fruit salad with watermelon 57°F, and cheese cake 60 on a cart in the school lunchroom. Pic corrected by discarding tcs food on cart and was instructed not to sell tcs food on cart as cold tcs food must be maintained at 41°F.

Found the floor under equipment, edges and corners on the cooking lines soiled with accumulation of debris. To correct thoroughly clean floors and keep clean.

Found cases of french fries stored on the floor of the walk in freezer. To correct place french fries on shelf at least 6 inches off the floor in the walk in freezer.

Found cases of single use utensils and numerous beverage coolers stored on the storage room floor. To correct organize store room and store utensils and equipment on shelves at least 6 inches off the floor.

Found 2 cardboard boxes used to hold various cake pans. To correct store cake pans in a storage container that is durable, smooth and cleanable.

Found an ice scoop stored on top of ice machine and another ice scoop stored in ice machine with handle laying on ice. To correct store ice scoops in holder or clean container.

(Critical) Found reheated time/temperature control for safety (tcs) food, pulled pork 120°F in the steam table. Pic corrected by reheating pulled pork to 165°F for 15 seconds and was reminded to monitor and verify foods are properly reheated for hot holding.

Found the hood filters in the dining area cooking hood greasy. Found the range top in the back cooking area soiled. Found the shelf tags on the walk in cooler shelves soiled with moldy build up. To correct clean noted areas and clean on a more frequent schedule.

Found cases of utensils and other items stored on the floor of the storage room. To correct store utensils and items on shelf at least 6 inches off the floor.

Found single use utensils stored in unlined wicker type baskets in the self service table. To correct either line wicker type baskets or replace with baskets that are durable and easy to clean.

(Critical) Observed a student place ready to eat (rte) food, cookies in a container for a customer with bare hands in the dining room area. Student corrected by discarding cookies, then used gloved hands to handle cookies. Pic has been instructed to monitor and ensure staff and students are handling rte food with gloves and utensils.

(Critical) Found ready to eat (rte), time/temperature control for safety (tcs) food, a container of facility made ranch dressing and feta cheese passed it's 7 (day prepared/opened + 6 days) day datemark. Pic corrected by discarding ranch dresssing and feta cheese, and has been instructed to monitor and ensure staff and students are checking dates and discarding items passed it's datemark.

(Critical) Used a quat test kit and found the sanitizing solution in the 3 compartment sink below manufacturers specification of 200 ppm. Pic corrected by remixing quat sanitizing solution to manufacturer specification. Pic has been instructed to post directions and mark the water line of three compartment sink, to insure staff and students are following proper procedures when using the 3 compartment sink.

Found the garbage disposal in the dishwashing area not working. To correct repair/replace garbage disposal.

Observed a table top house hold mixer which has an enamel type coating on attachments used in the kitchen. To correct replace with a commercial grade table top mixer.

(Critical) Found a container of cooking oil stored next to cleaning chemicals, and an opened sleeve of portion cup lids stored on top of fryer cleaner under the shelf of the steam table. Pic corrected by relocating cooking oil to food storage area, and discarded the portion cup lids. Pic has been instructed to monitor that food handlers are storing food and food utensils away from chemicals. ,

(Critical) Found opened gallons of milk and a tray of creme brulee in the walk in cooler without datemarks. Found an opened carton of whipping creme in the 3 door under the counter cooler without datemark. Pic corrected by discarding milk, creme brulle, and whipping cream, and has been instructed to label appropriate ready to eat foods with 7 day datemarks (day opened + 6 days). ,

(Critical) Found the underside of the slicer blade soiled with accumulation and build up. Found the cutting wheel of the electric can opener soiled with build up. Pic corrected by cleaning and sanitizing slicer blade and can opener. Soiled food contact surfaces has repeated and a risk control plan (rcp) has been issued. I will return to review rcp and verify food contact surfaces are being cleaned properely. ,

Found no manager certification available for entire facility. To correct provide manager certification.

Found surfaces of equipment and utensils stored on shelves and shelves under tables soiled with accumulation. Found the interiors of cooking equipment (ranges, ovens, etc) soiled with build up. To correct properly clean all equipment and utensils, and keep clean.

Found several soiled wiping cloths left on the slicer prep table. To correct store wiping cloths submerged under sanitizer in the sanitizing bucket.

Found several containers of ingredients on the prep table without labels. To correct provide labels.

Observed a student washing dishes not wearing hat or hair restraint. To correct provide hat, and remind students to wear them.

Found numerous bottles of personal drinks (some opened) in the 3 door under the counter cooler. To correct designate an employee/student storage area and store drinks in this designated area only.

Found the ice scoop with it's handle laying on top of ice in the ice machine. Pic corrected by placing ice scoop on hook/holder in the ice machine.

Found a mop on the floor besides the dishwashing area. To correct once cleaning task has been completed, hang mop.

Found handwashing signs not posted in the dining room kitchen, back kitchen, and the mens public restroom handsink areas. To correct provide and post signs reminding food handlers to wash hands at all locations where they may wash hands.

Found the food license posted in the kitchen office window out of view of customers. To correct post food license in a more conspicuous place for public inspection.

Found the floor (under equipment, edges and corners) in the entire facility soiled with accumulation of debris. To correct thoroughly clean floors and clean on a schedule to preclude accumulation.

(Critical) Used a quat test kit and found the sanitizing solution in the sanitizing bucket by the prep table in the cooking prep area below manufacturer specification of 200 ppm. Used a quat test kit and found the sanitizing solution in the sanitizing bucket in the dining room/kitchen cooking area clearly above manufacturers specification of 200 ppm. Pic corrected by re-making sanitizing solution in the 3 compartment sink to manufacturers specification of 200 ppm, and changed all sanitizing buckets. Note: sanitizing in buckets were made from different batches, but marking water levels in sink may help staff when making sanitizing solutions. ,

(Critical) Found several knives stored in the knife drawer soiled. Pic corrected by taking knives to dishwashing area to be washed, and has been instructed to monitor and ensure staff are following procedures in properly washing utensils before placing utensils in storage. ,

Found the door of the dishwashing machine not closing completely allowing water to spray out on edges. Found grease appear to be leaking on the head assembly area of the hobart mixer. To correct repair dishwashing machine and hobart mixer.

Found no handwashing sign in the back kitchen handsink, and in the public restrooms. To correct provide signs reminding employees to wash their hands at all locations where they may wash their hands.

Found sink stopper stored on top of clean plate on the clean utensil storage shelf. Pic corrected by placing sink stopper in proper location and plate was taken to be washed. Found chair with its legs stored on top of prep table. Pic corrected by removing chair and cleaning prep table, and has been reminded to clean and sanitize tables if chairs need to be place on table.

Found the bottom of utensil storage bins soiled with accumulation. To correct clean utensil storage bins.

Found a cart of soiled utensils stored in front of the handsink in the dining/kitchen area. To correct store cart in another area and keep handsink accessible.

Found a plastic bag of uniforms stored on the floor in front of the office. To correct store uniforms in a more protected manner, off the floor.

Found the clean utensils stored with handles down in the utensil bins in the storage room. To correct store utensils with handles up.

(Critical) Sour cream found at improper temperature in cold holding well serve line front kitchen. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection discarded sour cream in individual containers found at 50°F. Sour cream in plastic containers in a small metal pan inside a larger metal pan. Please be mindful of storing potentially hazardous food in direct contact with cold sides of pan and continue to monitor food to assure it maintains at 41°F or below at all times
