(Critical) Observed several pans of housemade rte salads in wic with incorrect datemark labels. Staff are creating 8 day consume by labels instead of the required 7 days. Also, observed pan of housemade rte potato salad on same wic shelf with expired datemark label. All housemade rte salads and deli meats must have a 7 day datemark label (day 1 is prep date) and must be discarded when expired. To correct, please train staff on proper datemarking procedures and discard all expired food as required. Observed several dispensing spoons stored inside of pans and laying on top of rte housemade salads (pasta salad, potato salad, hummus etc. . ) in wic. All serving utensils must be stored so the handle is extended up and out of food so foods are protected from possible contamination (from employee hands)
Observed several clean knives stored in back of knife storage rack on wall in back kitchen area near 3 compt sink (knives stored in between wall and knife rack). All clean utensils must be stored in a clean, dry area and not exposed to potential sources of contamination. To correct, please store knives in approved location and/or obtain another knife rack as soon as possible
(Critical) Observed several pans of cooked soups and rte chili in hot holding unit in back kitchen area with internal food temperatures of 100-113f. Soups and chili were removed from wic and placed in hot holding unit 1-1. 5 hours ago per staff. Please remember that hot holding units are designed to hold food hot, not for cooking or rapid reheating. All reheated phf must be rapidly reheated to 165f or more within 2 hours. To correct, need to reheat soups on rangetop or microwave oven before placing food into hot holding units. Observed ventilation filters and hood above flat top grill on south side of cooking line with an accumulation of grease and debris. To correct, please clean now and on a more frequent schedule
(Critical) Observed interior of ice machine (near chute areas) in prep area with an accumulation of mold and debris. All ice machines must be washed, rinsed and sanitized as per manufacturers directions and must be clean to sight and touch. To correct, please remove all ice from machine and clean and sanitize all interior surfaces as soon as possible. I will check this item at follow up inspection. Correct within 10 days. ,

Observed the following violations on the cooking line: *no ventilation filters in hood above flat top grill on north side of cooking line. *ventilation hood on north side of cooking line has a heavy accumulation of grease and debris. *ventilation filters above flat top grill on south side of cooking line soiled with grease and debris. *ventilation filters in back cooking area have an accumulation of grease and debris. Please note: sticker on side of hood indicated that hoods were last cleaned and serviced on 4/12. Need to increase cleaning frequency of all hoods and vent filters. Also, need to replace vent filters on north side as soon as possible.
Observed water leaking and missing hot water handle on garbage disposal sink in dishwashing area. To correct, please repair as soon as possible
(Critical) Observed recently installed hose with spray nozzle attached to water line under garbage disposal without proper backflow protection. To correct, need to install proper pressure type vacuum breaker or disconnect hose from hose bib after use. Observed in use knives being stored in between pieces of equipment on prep line. All utensils must be stored in a clean, dry location and must be protected from sources of contamination at all times. Cannot store utensils in between equipment as you cannot clean this area. To correct, please obtain knife rack for prep area or keep knives in approved location

Observed unlabeled food containers (squeeze bottles of water, dressings) on shelves on cooking line and salad prep area. All food containers must be labeled at all times for proper identification

All other hot food items were holding at 150f or more at time of inspection. All phf must be hot held at 135f or more at all times.
