(Critical) Potentially hazardous food on top of salad reach-in-cooler at waitress station not maintaining at proper temperature. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Corrected at time of inspection by discarding shredded cheese found at 47°F and relocating other potentially hazardous food items to bottom section of cooler: diced tomatoes, cut greens and cut fruit recently brought from wic still maintaining at proper temperature. The other non-potentially hazardous food items in top section of unit (commercial salad dressings) maintaining at 46°F - 47°F. After discussion with owner this unit is not capable of maintaining phf at proper temperature. Cut greens, cheese and diced tomatoes will be eliminated from top section of refrigerated unit (not nsf standard #7). Wait staff will begin making salads from refrigerated salad bar (these same ingredients are also available at salad bar), maintaining food at 38°F at time of this inspection. Cut fruit (with cut melon) will be stored in bottom section of unit maintaining food at 39°F at time of this inspection and plated to order. Cole slaw is already stored in bottom section and is plated to order
