(Critical) Repeat violation: observed 3 hot food items (halwa, channa masala and batura) on buffet table in dining room with no sneeze guards or other protection (all other food items on buffet have proper sneeze guards). All food on display shall be protected from contamination by the use of food guards, display cases or other effective means. Pic corrected by placing clam shell lids over top of steam table at time of inspection. Violation corrected. Please note: this violation has been cited at 2/3 routine inspections. If violation is cited at any inspection in the next year, enforcement actions will be needed

All potentially hazardous rte foods must be properly datemarked with a 7 day discard date (day 1 is prep date). (Critical) Observed 3 pans of housemade sauces on counter in cooking area (back-ups for buffet) with internal food temperatures of 55-67f (sauces have been on counter for 1. 5 hours per pic). Cannot store back up food pans at room temperature all phf must be held at 41f or below (or above 135f) at all times. Pic corrected by placing food pans in cooler or on ice at time of inspection. Violation corrected.

(Critical) Large pots found in rear kitchen that cannot be immersed in the sink compartments at the 3-compartment sink manual warewashing operation and cannot fit in the automatic warewashing machine. Please remove the 16 gallon and 10 gallon pots or provide larger compartments at 3-compartment sink. Not corrected. ,

(Critical) Three hot food items found without cover at the lunch buffet. Food shall be protected from potential contamination. Corrected at time of inspection by providing lids for these three food items. As discussed in previous inspections consider providing an additional sneeze shield for these food items for permanent correction

(Critical) Two large containers of potentially hazardous food items found at improper temperature in rear kitchen. Potentially hazardous food shall maintain at 41°F or below or 135°F or above at all times. Corrected at time of inspection by discarding (1) 16 gallon pot approximately 1/2°Filled with cooked potatoes found at 54°F and (2) 16 gallon pot approximately 3/4°Filled with raw vegetable mixture including cut cabbage found at 75°F. All food was placed in plastic garbage bags, soap poured into each bag and placed in dumpster. Discussed making smaller batches of food daily instead of one large batch weekly; facility was making smaller batches daily per pic; will provide list of food items prepared, which day they are prepared and how much at follow-up inspection

(Critical) Cheese ball mixture (kofta) and cooked curry chicken found at improper temperature on prep table on cook line. Potentially hazardous food shall maintain at 41°F or below or 135°F or above. Corrected at time of inspection by (1) discarding cheese ball mixture (cheese, cooked potatoes, spices, flour, etc) found at 75°F and (2) reheating boiled chicken found at 91°F to >165°F on stove top in sauce. Once food removed from temperature control the next step in the preparation should be completed quickly by batching food and staying on task so the food item does not go into the danger zone (42°F - 134°F).

It appears that you are preparing too much food to go through within 6 days from preparation date. Per pic were slow last week due to winter break. Critical corrected: at time of inspection discarded insecticides and fly strip. You may use the sticky fly strips as long as they are not placed directly over food preparation areas or any other areas that may be contaminated

Some other blender parts found in need of cleaning which are not used per pic were removed to basement

Potentially hazardous food that is cooked, cooled and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 165°F for 15 seconds. Critical corrected: at time of inspection reheated tandoori chicken in oven to >165°F. Fully-cooked tandoori chicken being reheated in tandoori oven; when removed some chicken found at 120°F - 130°F.

(Critical) Observed food employee contacting ready-to-eat food item with bare hands. Food employees may not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils, single-use gloves or dispensing equipment. Critical corrected: at time of inspection discarded reheated chicken that was touched by food employee. Per pic food employee should be using tongs to remove tandoori chicken from skewers after reheating in oven. Gloves are also available. Please remember that any ready-to-eat food item cannot be contacted with bare hands, including but not limited to all bread, salad preparation (with exception of washing fruits and vegetables)
